How to make a Rhubarb Chutney

Rhubarb Chutney Recipe
TIMINGS:
• Prep Time: 15 mins.
• Cooking Time: 60 mins.
• Total Time: 1 hour 15 mins.
SERVINGS:
• Makes 4 x 370g Jars
INGREDIENTS:
• ¾ cup (175ml/6 fl oz) Red Wine Vinegar.
• 2½ cups (250g/9oz) Red Onions, peeled and diced small.
• 2 tbsp Root Ginger, grated.
• 1 cup (200g/7oz) Light Brown Sugar.
• ½ cup (75g/2 ½ oz) Pitted Dates, chopped.
• 2 tsp Mild Curry Powder.
• 2 tsp Wholegrain Mustard.
• 1 tsp Salt.
• ½ cup + 3 tbsp (100g/3 ½oz) Raisins/Cranberries (or a mix of both).
• 3 cups (300g/10 ½ oz) Eating Apples (Pink Lady), peeled and chopped.
• 3½ cups (400g/14oz) Rhubarb, sliced into 3 cm chunks.
METHOD:
1. Place the red wine vinegar, red onions and grated ginger in a large, heavy-based saucepan and stir to combine.
2. Bring to the boil and simmer for 15 minutes.
3. Add the sugar, dates, curry powder, mustard, raisins/cranberries, apple and rhubarb and bring it to the boil.
4. Then simmer uncovered for 45 minutes, stirring often so it doesn’t burn.
5. When cooked the chutney will have reduced in size and should have a thick and "jammy" consistency.
6. Allow to cool for 20 minutes before spooning it into sterilized jam jars.
7. When cool, place a label on the jars and keep them for at least a month before eating.
8. Mmm Scrummy!!!
STORAGE:
The rhubarb chutney will keep for 6 to 12 months (or longer) if stored in a cool, dark place.

    I have so much rhubarb growing. This sounds delicious. Are the jars supposed to be processed- water bath?

    Its a great recipe to use it up. I usually give it as gifts at Christmas. I steralilse the jam jars in the oven, wash dry and heat them for about sterlise them in the oven for 15-20 mins x

    Such a lovely recipe.. I have everything except the apples and dates, so will probably put them on my shopping list; my rhubarb is super healthy, so happy to harvest it another couple of times this year :)

    I love rhubarb but have never made chutney. I really want to try this recipe! We really only have mango chutney here. In the US when we can we have to do a boiling water bath etc. It is time consuming. I was curious if you just put it in sterilized jars or if you do another step so it lasts until Christmas. Thanks!!

    Yes I steralised the jars Laura. I make chutney quite a bit. I still have an unopened plum one I made 2 years ago and it still looks perfect x
