Soft honey cake with sponge cakes without rolling and sour cream. A simple and very quick recipe for a delicious honey cake.
The DOUGH:
100 g butter
100 g of sugar
100 g of honey
4 eggs
10 g of baking soda
200 g flour
CREAM:
400 g sour cream with a fat content of 30%
30 g of honey
100 g powdered sugar
300 ml cream 35%
The DOUGH
1. Melt the butter in a water bath.
2. Add sugar and honey to the butter. Mix well until dissolved.
3. Add soda, please note: soda reacts with honey, and the mass will increase in volume.
4. Beat the eggs with a whisk. And add to the mass. Beat with a mixer for a minute.
5. Remove from the water bath and add the sifted flour. It is advisable to add and mix in parts.
6. Divide the dough into 2 parts, pour the dough on a baking sheet, smooth over the entire area with a spatula.
7. Bake at 180 degrees for 5-7 minutes until the cake is ready (it may take a little more or less time depending on the thickness of the cake and the oven).
8. Trim the edges of the finished cakes, cut each cake into 2, 3 or 4 parts.
CREAM
9. Take 400 g of fat sour cream 30%. Add 100 g of sifted powdered sugar, 30 g of honey and mix thoroughly.
10. Add 35% fat cream in an amount of 300 g.
11. Beat the cream until soft peaks form. Then remove the finished cream in the refrigerator for 30 minutes.
BUILD
12. We take out the cream from the refrigerator and collect the cake. We coat all the layers well.
13. Sprinkle the honey cake with crumbs.
14. Put in the refrigerator for an hour, so that all the layers are well soaked. Or we start drinking tea right away.
