White Manna Diner in Hackensack, NJ, began at the 1939 New York World's Fair, showcasing modern diner efficiency before moving to its current location in the early 1940s. Famous for its sliders, which are small hamburgers cooked with onions on a griddle and served on soft buns, White Manna has maintained its original recipes and methods for 80 Years. This historic stainless-steel diner is a piece of American history and today we learn how to make them at home to feed a lot of guests fast.

Those are delicious looking sliders. Bigger than White Castle, but small enough to feel satisified.

Love that you are using ppe! I recommend a nitrile glove over the cut proof to keep it clean!

Steve...looks amazing. Tip for rightsizing the cheese. Make two diagonal cuts (corner to corner) to yield 4 triangles of cheese that can be reassembled into two small squares. lol

Ive lived in NJ my whole 54 years and ive NEVER had them (shame on me) although Ive known about them forever. I have had white castles about 1000 times though.

@@arwiviv I live in NJ I've had them a few times over my 54 years and I gotta say each time I was unimpressed. I could never see what the hype was all about. Just flavorless hot meat with onions and cheese on bread. And don't be there when it's packed and then someone calls in an order for like 30, then someone walks in and orders 16 while someone is already waiting for their order of 25, like what happened to me a few months back. It literally took close to an hour for my son and I to receive 2 orders of 3 doubles and fries. But don't take my word for it give them a shot, you just may enjoy the burgers and your experience. For me personally as far as sliders go the 1921 burgers that are made to order at White Castle are much better IMO. But Steve did nail these White Manor burgers, that's exactly what they look like.

As a total burger snob -- this is Literally looking like THE best burger EVER! I think 75/25 is even a little better!
Had to stop myself from vomiting twice during this. The smell from those onions got me. I've literally had nightmares about onions, yelled to my dad in my sleep about onions while camping. Crisp some bacon, sautéed shrooms and a piece of swiss,... you got masterpiece.

YES last burger i made was as close to this as i could get - i only had red onion and tried using my unsharp knife to cut thin, but good beef and american cheese / brioche bun. Deep goodness. George Motz led me from a recent video

That is exactly how my family has always made burgers, including the bun trick. No onion though, but I do make mine with onion now.
At first I thought you put too much onion on those sliders but then I realized that wasn't possible. I'm going to have to get a mandolin now. I also like to put some garlic on my sliders. BTW, I bought a Made In pan that you featured here. Now I can sear steaks in the pan and finish it off in the oven. Thanks.

I just looked it up on GMaps. There's a McDonald's perched very boldly just across the street. I know where I'd stop if I ever wound up in Hackensack craving a burger, tho.
I’ve eaten there many times, but an even better kept secret then White Manor is White Rose, same exact method but their rolls are better and they have 2 size burgers, the small ones are on a soft regular burger roll, but the big one which everyone gets is on a perfect hard roll or some other places call it a Kaiser roll, the only two I know of are in Linden NJ & Elizabeth NJ

Wow, so simple. This is something that I can do at Job Fairs where we invite the Homeless for meals and give them a chance at job opportunities. I cook often there for the get-togethers.

I made sliders for a new years party of mine they were a hit. I ground a 10lb brisket and I used Hawaiian sweet rolls, I made one giant square patty the size of an entire sheet of sweet rolls and smashed it onto the griddle with clarified butter. I made sautéed onions on the side, and I had 3 options for cheese cheddar, pepper jack, and American. One 1/3 of the patty for each cheese. Once it was done I assembled the entire sheet as one giant burger and then cut off each row of rolls at a time. They were the best sliders I've ever had.

White Manna is my favorite place I went in Jersey
I would add a couple hamburger dill pickles and yellow mustard. Ketchup is for fries or cocktail sauce.
You should cover the sliders with foil to properly steam the buns.
I wish White Manna put salt on their burgers. The only taste comes from those onions! (Which will stink up your car for days, but oh my God who cares?!) They aren’t the greatest burgers on earth but when you want them, you NEED them and if you know, you know! ❤❤❤

Great video. Respectfully, clean hands are as good as nitrile gloves and paper can sub for plastic on the scale. Less plastic waste overall.

No comparison imo, Oklahoma onion burgers are on a completely different level…coming from someone who’s gone there off and on over the last 40 or so years having grown up about 15 min from the place and passing by the place 2 times a week playing hockey at the ice rink down the street in my adult years. They are way overrated. Went back there the other week as I haven’t been there in nearly 10 years, but have seen a ton of foodie KZreadrs popping up visiting the place and raving about it over the last few years so I had to double check and see if there was something awry with my taste buds…nope still the same mid burger I remembered from over the last 40 or so years.

Do 1.2 ounces per patty hit them with onion and cheese and put one half of the bread to steam on each patty and then stack them like a normal burger, more cheese and onion for lubrication and properly steamed top bun.
unless you've watched a lot of KZread videos on good hamburger restaurants you've never heard of White manna. White Castle on the other hand has movies & frozen burgers at the grocery store. Them are good looking burgers!!!!

I make the Brokelahoma onion burger all the time. Excuse the "brokelahoma" I'm from Texas. Anywho,it never occurred to me to cut the cheese to size. Awesome pro-tip. I'm definitely incorporating this. Thanks, bud.

Nice, but I prefer the original White Mana in Jersey City, which is actually the one from the '39 World's Fair. Same idea, but a much more enjoyable experience in the JC one, where I ate many more times. The Hackensack guys are ok, but they can often be not customer friendly compared to the vibe in JC. Just one guy's opinion, and I may try this one day at home if it weren't for the smoke and fire alarms.

Agreed, still not great by any stretch but the quality and flavor of their beef is better (they use a proprietary blend from Pat LaFrieda). Lived in the Heights for 8ish years and played hockey twice a week at the rink near Manna Hackensack(as well as grew up roughly 15 minutes from there) but prefer Mana over Manna.

America’s most famous sliders are from White Castle. They were here 20 years before White Manna even opened their doors. Most people have never even heard of White Manna.

If you're going ounces, you have to go 1.6, 1/10 of a pound. Incidentally that is exactly what the McDonald's regular patties weigh, so technically McDonald's regular burgers are sliders and the QPC is the regular burger.

One of my old customers, from a previous employer, was a White Castle plant. We took care of their hvac. This is not even close to how they make them. They have test kitchens in the plant, and your mix isn't even close to how they make it. They used the kitchens to see if the mix was correct and to their standards.
