    I love the methodology around taste balance/aromatics/mouthfeel - I advocated a similar approach when dialling in coffee or even cooking and it works wonders. Amazing content as usual Dan, can't wait for the future videos!

    I made a gin sour made with a gin that have seaweed in it, i added a few drops salin solution and used a fried seaweed as a garnish. Very tasty and the fried seaweed taste like a umamibomb full of salt and flavour

    Your videos are fantastic! Thank you for sharing all of these amazing tips. I’ve made all four of your acid adjusting solutions but am embarrassed to admit I don’t know to use them effectively. Is there any possibility of a follow up video please that shows examples of how you use these in popular drinks, such as Margeritas, etc.?

    Thank you so much! 🙌 As they are 6% solutions, you can add them in the same proportion as the recipe, anywhere you see lemon juice in a recipe for the acidity but not flavour. Increase the amount slightly if you are replacing like juice as this is slightly more acidic than lemon / a 6% solution. You can also acid adjust different fruit juices to make things like Sour Orange Juice (great in Margarita style drinks), Malic Grapefruit Juice (tastes like grapefruit, feels like apple juice 🤯) or any other combination of acid and juice. I hope this helps!

    Thank you for all the tips ! I discovered the coconut sugar thanks to you. I wanted to try it in the negroni as some of my friends find it too bitter. As I understood that it has some coffee/toffee taste I thought it would work. I put 2 cl of coconut sugar simple syrup (1v/1v). The negroni was more weat but I didn't find the taste of the coconut sugar. maybe it's not enough? How do you use it ? Thanks !

    Hi Dan, liked your video. Have you got a ration on which such an Acid booster would be using cirtic, malic, tartaric etc. when combining them, or do you just use the single acids ?

    Thank you! If I'm being hyper detailed, I'll make them all into 6% acid solutions and play round with different blends. A nice go-to recipe is 4% citric and 2% malic which loosely mimics the acid make up of lots of citrus fruits. I always have a dropper bottle of this on hand when making drinks.

    Thank you! I use 6% acid solutions which are close to the acidity of lemons, so 6g of acid to 94g water, for example :) You can then switch this in in roughly the same proportions as lemon juice if you want the acidity but not the lemon flavour. Limes are slightly more acidic, around 8% so you would add slightly less acid solution if it is in place of lime juice. I always encourage experimentation to find your own balance preferences.

    Thank you Dan! Great video and great content as usual! I'm learning a lot but I am getting confused somehow with your percentage of acid solutions. 6 grams of acids and 100 grams of water give you 106 grams of total acid solution. And if you have 6 grams in 106 grams total then it's only 5.66% of acid solution. Don't you need to have 6 grams in total of 100 grams (i.e. just 94 grams of water (94 + 6 = 100)) in order to have 6% solution? Sorry for too much maths. Thank you and kind regards!
