Any recommendations where to put protection between the layers for snowboarding and mountain biking?

Good question. I put it mine on the baselayer. So the back protector adds to the insulation layer.
Snowboarders? They should be marketing to skiers. The average skier is a babyboomer corporate executive making 7 figures; the average snowboarder is a dishwasher at the local resort. 😂
