i would recommend turning on the lights before lat action.

Yes at 8:20 m on video, it's safe to turn the lights on, but only to test it. Since all connectors are installed & grounded & the safety cable is properly attached. Then I would turn the lights off & finish off the job. Just for safety, especially if you're a first timer. If you're a pro then it's up to you. Just my opinion.

Is it possible to mount two of these panels side by side and connect them to the same set of electrical wires from the ceiling?

I'm sure you can, but better to do it before drywalling you ceiling.
Why didn't you use all six drywall anchors? Mine came with six.

I would use all six if the it was into drywall only, & use anchors for them.
Also, check that the ceiling is flat otherwise you may have to shim and that is super annoying.
