    Your use of fresh herbs can disturb the minimal water balance in the honey and make it prime for bacterial growth!

    @@HormonesBalanceHealth Thank you, though that wasn't quite what I meant. Obviously put a lid on it when not in use, I meant when in the slow cooker, don't you need to put a lid on it while it is infusing for all those hours? The article version also shows a picture of the jar with the honey in the slow cooker without a lid on it, so that is what I am asking. Did you leave the lid off for the pictures and demo just cuz that it how it is supposed to be done or was it just for show and a lid is supposed to go on it while in the slow cooker?

    That's because you want the water from fresh herbs to evaporate. If you put the lid on when infusing, the water will drip into honey, making it prone to growing mold and spoilage. Hope this helps!
