As for me the biggest problem with face sculpts was that I couldn't feel the volumes, so there're 2 advices if you have the same issue: 1. sculpt brutal/old men or humanoid creatures (thus the face isn't plane) 2. do lots of small practices like 2hours each. This helped me

doing some drawing with vanishing lines would help as well. almost all parts of face is a distortion of main geometric shapes really getting it right by drawing (understanding of form and proportions is the key then sculpting everything just manner of time)

This video completely changed the level of my sculpts. Before I used the default clay buildup brush and smooth stronger to make my forms. I very time-consuming process. Using Clay buildup brush with alpha 6, now that is way better, I can smooth and add volume at the same time without constantly erasing all my work with the smooth brush

It's a good idea to mask the jaw and make it a different polygroup. That way you can have more control over it, being able to open the mouth of your base mesh. Then you would just need to carve the inside of the mouth, and since you have different polygroups you can just isolate whenever is necessary to better reach the inside of the mouth.
