Well thank you, this has been an educational video for me. I have only seen young bamboo shoots harvested and peeled, then sold for consumption as food; so I was surprised when you and your husband started to harvest such large shoots and then peel them and prepared them for eating. Very confusing to this westerner as I think if you harvest all the young bamboo shoots the bamboo forest will soon die (as with other videos I have seen that only harvest very young shoots). But I thought ok peelings very good pig feed (then I thought well no one keeps them for pig feed so maybe not). Very interesting that you have so many preparations for the peeled product and its a income for the grower. Sorry I have bamboo growing in my yard which I did not plant, and I cut it down, I poison it and chop it out but it still grows so why am I worried when all of your country harvest the bamboo shoots and worry about the survival of the species. Very educational for a fool such as I as we treat the bamboo as a pest whereas you treat as a resource, We definitely have to talk more for our joint survival. Thank you I had not idea of the full results of harvesting this resource.

Sandra Dunbar you are no fool, you just do not have all the information. As for destroying the bamboo species, unlike trees once a bamboo plant starts to grow it puts out roots with rhizomes, once that happens new shoots start to emerge. The only way to get rid of bamboo is with chemicals over several years (bad for the soil) or an excavator to rip out all the roots in an area. Kieu stated in the subtitles that she and her family planted that bamboo forest 7 years ago and that she harvests shoots once a week during bamboo season. SMART eh! Plant the bamboo, nature takes care of it, no fertilizers, just harvest.

Thank you, I think a lot of my attitude is that in my experience I have no use for bamboo, whereas in Asia it is a very important aspect of life both from a food source and use for materials to assist with building and growing of food., This is one major reason why people of different cultures; have to talk to one another; to explain WHY. Sorry my concern has been why Asia harvests the young shoots and fear of destroying the species. Its wonderful to know I am ignorant in this area. Thank you for explaining the position.@@yeagerxp

This is the main source of income for farmers here. When we make dried bamboo shoots, traders come to the kiln to buy them at high prices. Bamboo grown for several years has no potential. But in recent years bamboo shoots bring great benefits. We collect bamboo shoots, bamboo leaves and bamboo plants. Everything that belongs to bamboo is exported abroad. Currently people here are massively planting bamboo, I think at some point, supply will exceed demand, bamboo will be stagnant and then cut down again. Thanks a lot.
