Hey how do you even get these union shoots?

Hey, it's not easy. You would ideally know a union producer/DP/Director who is starting a project and get on that way. Other way is to call the union hall you're trying to get into and ask to be put on the roster. Back in the day (during pilot season) when the town was busy, they would work their way through the roster.
