How To Freeze Mashed Potatoes So They Aren't Awful.

Each fall we store around 200 pounds of potatoes to eat through the winter months. About the end of April our potatoes are starting the grow sprouts and get a little bit soft so it is time to preserve some to eat until mid July when our next growing of potatoes can then start to be harvested.
There is nothing wrong with the older potatoes and we buy new seed each year so we don't save any to plant (though you could).
I have canned potatoes before but I find that very time consuming for what I get from it and at our local grocery store canned potatoes are less than two dollars per can. Crazy!
I have also dehydrated mashed potatoes and then ground them up into a flour, again, it is so much work!
The only other way we preserve potatoes is to blanch shredded potatoes and then freeze them to make breakfasts with. The blanching keeps them from going brown before you can cook them.

    Mine aren't grainy, but leak lots of water. I've never managed to freeze potatoes that weren't full of water.

    Hi there! So glad your potatoes aren’t grainy. I have water in my thawed potatoes too, I just stir it back in during reheating. The potatoes absorb water during the cooking process as the starch breaks down. The absorbed water turns to ice crystals and then liquid once it thaws. This is different from raw veggies such as my zucchini that gets frozen and watery when it thaws. That extra moisture in this case is from the water in the vegetable expanding when frozen and causing the cell walls of the plant to rupture. This is a particularly helpful process when we want to use rhubarb for cooking but don’t want to have to cook it first. After freezing raw it comes out a nice soft consistency for baking etc. Sorry that was long but hopefully helpful as to why the potatoes are watery after they thaw. Take care, Annette

    Un-thaw is this a oxymoron ??? To thaw is to take from freezer and defrost. What does un thaw mean, Thanks for the video looked great. My sister says un thaw all the time😂❤
