I hear a lot of people say they don't eat these but personally I think they're great if cooked nicely. Just floured and cooked in butter with a small big or garlic. Also I keep the skin on it crisps up nicely similar to salmon.

Just caught my first salmon yesterday, and cooked it today on a frying pan. Nothing wrong with the fish at all.

Great video. That blood line you were talking about isn't actually blood, it is muscle. This is why the fish is such a good fighter. I always bleed my Kahawai immediately and remove the gills.

there in the mullet family. and the bit you took off that sits behind the gill plate i find is the tastest part of the fish even if you were to put it in a stock it would be as good as if yiu cooked it normally

Bleed the salmon to reduce the size of the blood line. The meet is also better eating

I don’t bother with the blood line (actually muscle). I quite like it in my cooking, same as the skin once scaled.
