How to Encrypt external USB drives on macOS in 3 minutes

I'm sure there's many tutorials on the web but I was a bit surprised how a simple UI quirk makes this a lot more confusing than it needs to be. Encrypting external media like USB drives (thumbdrives/usb sticks), Hard drives, SSDs can be a bit cumbersome in macOS. This tutorial will walk through the steps needed to create encrypted APFS external media.
It's been awhile since I've done a quick tutorial but this one warranted it as I found this annoying.

On my Mac mini running Sonoma 14.1.1 I do not have the "Scheme" drop down menu box. The target USB drive is "old in years" but fresh from the factory packaging. Does the physical media prevent some options in the Disk Utility?

Never mind. I found the answer at 1:11 in your video. Right where you say "This is very important". Doh! Thank you. A like coming your way.
I followed each step and, as you said, I got the Operation Failed… message. However when I clicked to eject the volume within device it ejected the device as well! Tried it 3 times and each time the volume and the device disappears. (Sanoma 14.4.1)
I'm feeling there's a war on encryption. Making encryption harder, less user friendly, or just using no encryption by default.
This does not work now with Ventura in 2024!?

This video is only 5 months old. I used Sonoma for this video if memory serves me correctly but I may have been on Ventura. I can assure you it works still.
This is such bull shit. Can Apple make something that is easy to use? This is bull shit and IMO better to buy a third party app.
