Coming to you straight from the sushi chef's mouth, MUNCHIES presents the dos and don'ts of eating sushi, as taught by Tokyo's Naomichi Yasuda. Be warned: You've been doing it wrong. Just remember: It's okay to use your fingers to eat cut sushi rolls. Don't combine ginger and sushi, or ginger and soy sauce. Ginger is a palate cleanser in between bites. When dipping sushi into soy sauce, dip fish-side down. Never shake soy sauce off of sushi. That's like shaking your wanker in public.

    As a Japanese person, I just wanted to point out that these manners are only for these very authentic restaurants where the food is so well executed that they want you to enjoy it just as is, so that it tastes exactly how they intend it to taste. They are the pros, they know the best way to eat them, and you're supposedly there, paying expensive money, to experience their way of prep/service. It's not just religious/cultural manners. There's actually a logical reason behind them, for customers to taste it the best way possible. If that feels too controlling or you have a certain preference on how you want to eat your food, different from their suggestion, then it defeats the whole purpose of even going to these restaurants. Just don't go. It's obviously not for you, and there's nothing wrong with that. It not only disrupts the flow of the restaurant, which affects other guests' food and experience, but also causes stress on both ends because you too are paying too much money to be forced to eat a certain way. If you go to a more casual sushi joint, Japan or US, you can drench your California rolls with sriracha and spicy mayo all you want. You'll actually need these sauces because the fish/rice/technique won't be good enough to taste good on its own. It's very difficult to make good enough sushi to even be worth all these bothersome manners. That is why it's so meticulous and expensive. Besides, most people's palates, who are used to flavoring food with strong spices and sauces, won't even be able to differentiate and enjoy these kinds of food because it's too subtle. Most will find it too bland. I know from experience because I've taken many of my American friends to try dining at these places. People have different sensitivities and palates, depending on what they ate growing up, and there's no right or wrong. Like art, it's not for everybody. If you read this long-ass comment all the way to the end, I appreciate your precious time, you are a true legend, but also bored as f**k lol

    Chef Yasuda served me and a friend omakase at his restaurant in Tokyo in 2016 and it was one of the best meals of my life. What made it one of the best wasn't just the food (which was incredible), but also Chef telling us stories of his time living in New York City, his visits to the fish market in Tokyo, and the funny jokes along the way. It was a once-in-a-lifetime experience.

    when you are hungry, you shovel it in. 30 pieces are usually enough for me. i refuse to eat raw fish after a horrible experience with parasites and bacteria. i will only eat smoked or cooked seafood in sushi rolls or just veggie rolls.

    I’ve been to his restaurant in Tokyo. He’s as funny and charming in person. His sushi was by far the best I’ve ever had. He made this grass sushi that was unreal. Seriously the guy is such a master he can make high level sushi from grass.

    "hi! hello!" is my favorite part. what a hilarious guy. this is a fantastic video. where I live we don't have a sushi restaurant for a couple of an hours drive so I make it at home. i've been doing it for years and fairly good at it, but i so miss having a place to go to. when I lived in sf i was two doors down from a sushi restaurant. i could eat nothing but sushi if i had my way :)

    @Mark Michon Hard to find a place to start so I'll try to explain a few things. The single biggest killer of men in Japan aged 20-44 is actually suicide. This was made worse since the 1998 and 2008 financial crises. 40% of young people cannot find a stable job and this is after the highly pressurised mandatory educational environments they are raised in. So they get a bit lost. And for those employed - most in offices - the job is very demanding and many work a least 12 hours, leaving work at 10pm after starting at 9am. And then there's the patriarchal aspects to the society which in a world so interconnected today and most places show more equality, it can cause even more stress on younger females who yearn for that bit more than they're getting.     I went to a nice sushi restaurant in Kyoto, but I struggled using the chopsticks, so the chef told me it was 100% acceptable to use my fingers for all kinds of sushi, not just the rolled ones. Saved my evening.

    Had sushi this weekend then saw the video. Ordered sushi again and ate it as suggested and OMG! The difference is startling and now I am trying all sorts of sushi so I can eat it correctly. I have only ever had soy sauce once with sushi some 15 years ago. I will forever eat sushi this way. I'm so grateful to have found this video.

Vegetarian means you don't eat meat. But what you do eat is milk based products. Actually everything from honey to milk. You can have it all and milk and it's based products form a large source of daily diet for such vegetarians. Only killing an animal, insect, bird or fish is not allowed. It's nothing to do with all the shit I see in debate rooms of West over veganism. It's not veganism, it's malnutrition that is in practice their and then they say people of East are overly dramatic with their choices.

    My first sushi experience was when I was living in Ann Arbor, MI; not exactly a haven for Japanese cuisine. The chef, however, was Japanese, and he was gracious and patient enough to teach me most of this back then. It made a huge difference to my enjoyment of the dishes, and I'll always appreciate him for that.

    As far as Midwest cities go, Ann Arbor has more than a few legitimate sushi spots run by actual Japanese. Lots of Japanese auto R&D in the area brings this kind of culture to a place where you normally wouldn’t find it.

    my first sushi experience was at the local Japanese embassy ... by the Ambassadors chef ... it was like putting the best chocolate or ice cream i your mouth inhaling quickly from the sensation and noticing it was melted just by the heat of your mouth ... true sushi is AWESOME ... those california rolls IMHO are garbage ...

    The way his body moved, that's muscle memory. He could have prepped that sushi blindfolded. Notice how he sliced the 1st set of sushi rolls after shaping. His body movement, almost twitched, that's speed of reflex / muscle memory. He didnt require active thoughts for those motion. I've seen musicians and fencing sword duels move the same way. Point is, this chef is a Master.

    @@lillyanneserrelio2187 Yeah, Yasuda was an underground boxer, you actually can get a little background on him through the late Anthony Bourdain's Parts Unknown Tokyo (season 2-ish), wonderful guy. Also very interesting, his fish is almost never fresh, he innovated a technique that uses medical freezers and knife technique to break the fish down at the molecular level to increase tenderness and concentrate flavor.

    Some sushi chefs prepare sushi-type items meant to be eaten with a spoon, most notably Nobu Matsuhisa and a lot of the guys who have worked under him. Yasuda-san wouldn't however, and considering the dude is a high-level black belt in full-contact bare-knuckle Kyokushin Karate, he probably would pull a Hokuto no Ken on any Amateur Fish Eater who tried.
