One more suggestion for people with lots of freezer space: I buy all types of dry beans in bulk. Then I cook them in my slow-cooker and freeze them in small portions. It’s quite a bit cheaper than buying canned beans, and without the salt and chemicals.
You amaze me how you are so creative with food items I would NEVER think of combining to make a meal. Great job! 👍

Love all these ideas, especially the breakfast pumpkin cream cheese “pastry”! For myself, instead of the club sandwich, I’d cut each piece in half and leave them open faced. The color was lovely, and it would fill my whole plate- giving a feeling of abundance. ❤

I would do it open faced as well. 😊 It did look yummy as a club sandwich though. Chickpeas are wonderful.
Love those ideas! I think I would mix the pumpkin and cream cheese together and make a sauce with brown sugar for the week and just stick it in the refrigerator and warm as needed. For the chick peas, I would make Hummus and spread that on top of the avocado mixture. The tuna pasta looked delicious and the pumpkin pasta reminded me of pumpkin ravioli that is served in some fancy restaurants! Great job!!!

I too have a few plain pumpkin cans. I know it can be used to replace milk and eggs in some cake mixes. Would be especially good in spice cake or carrot cake mixes. I like the pumpkin cream cheese spread. I would make a large serving and freeze in DT small containers and replace as I use what's in fridge. Add some Cinnamon & nutmeg. Might be good with some crushed pecans or walnuts sprinkles on top. Almost like a dessert.

Those pumpkin and cream cheese toasts though, they look soooo delicious! You never disappoint and did great with 15 bucks considering current prices! Our local discount grocery store has those cans of chickpeas, 3 for a dollar, you can bet I pounced on those and stocked up. Great for making veggie burgers or crushed into dip.. yummm!

Good video. Gardening helps us. Onions, tomatoes, zucchini, green peppers, lettuce (going to grow this in our southfacing window now), Aldis mayo mixed in with vinegar and sugar for a great salad dressing. All of these help us. Keeping flour on hand to make bread is cheaper too. Thanks for the ideas!
Love all your ideas...was thinking, for the pumpkin pasta some frozen chopped spinach might be a good in it.... I buy the Great Value frozen chopped for a dollar a bag..it's so handy b/c there's no prep..I keep it on hand all the time ..I love it in a recipe of yours that I make often and which I love..It's one of your starving college student recipes......I didn't have any green onions which the recipe called for and had to use white onions..I wanted some green in the dish so I added the spinach...the frozen chopped spinach is chopped fine and the flavor is mild so it worked great. I made it for lunch today and really enjoyed it.

The frozen bag is great especially because the spinach is loose. When you buy the frozen box it's just this huge solid chunk! Glad you liked the recipe.

oh i wondered where you had gone quaint i was getting bored of youtube without you doing your video posts. i have a tight budget this week from today onwards. i got rice and beans and pasta with minced beef and sauce for main meals. i got these aldi penguin rip offs for a snack they have 5 grams of saturated fat per bar my eyes almost popped out my head at that amount they are so bad for you but taste great. im having ready meal fish pies for lunch and cheese and pickle baps for other lunches. my approach on a tight budget is to get calories but also still have fruit and veg but im not the sort of person that worries too much about healthy eating.

@@TheQuaintHousewife penguins (or seal bars at aldi) are chocolate coated chocolate biscuits. fish pie is fish with sauce then mashed potato on top and baps are large bread rolls or buns they are good with cheese and wafer thin ham.

Great choices for this challenge. I love pumpkin. You have inspired me to make vegan cream cheese and make the breakfast. I make a variation of your lunch sandwich often. I would add a bit of garlic powder to the avocado. I am going to try the pumpkin pasta as well.

Great Job! The toast looked amazing! I am going to make my pasta salad with Caesar dressing next time maybe add a few black olives. I'm glad that you used elbows in this. They are underrated. But so many uses.

Walmart only sells 2 lb boxes in limited popular shapes, one of which is the elbows. Olives are great in pasta salad.

These meals looks so good. TFS 😊 I have many cans of pumpking to use that were given to me last year. I think I might have added just a little few of the chickpeas to the pasta salad - my family doesn't like pasta salad but I do. (My husband doesn't care for chickpeas either so that would be just for me, lol!)
The Tuna pasta sounds delicious! Have you ever used sesame seed oil? I just bought some for the first time, kind of expensive but a tiny bit goes a long way in flavor, I put it on my salad and it was a game changer for me...so delicious! I love your idea of the avocado and chick pea club sandwich too and your pumpkin/cream cheese toast! Love your channel!

You are a genius 🙃! I would probably eat the pasta and tuna cold, possibly with celery if cucumber is not available. During pumpkin season I roast pumpkins in the oven. Then I scrape out the cooked flesh and freeze it in portions for use throughout the year. It’s cheap and might work for people with freezer chests, where space is less of an issue.

hi hope your ok mrs Q? made a very cheap meal mixed bean curry with basmati rice. i really enjoyed it just get a can of mixed beans a can of tomatoes curry powder 3 onions and a few teaspoons of sugar and salt to taste. you just fry the onions until carmelised slightly then add everything else afterwards and simmer for 20 minutes until thickened enough. dont throw away the beans water add that with it. the curry is delicious! this can feed 4 people.
I will try these,they’re healthy and am always looking for ways to use pumpkin, and off topic I like you with blonde hair and the style too!

Great ideas and variety! Another option is to mash the chickpeas on the sandwich. If eggs weren't so pricey right now, avocado egg toast would be great in this menu.
Good job. I usually eat 2 meals daily and 2 slices of bread is plenty for my appetite. I would make a batch of pumpkin butter and whip the cream cheese to make it go a little farther. It could be a nice snack or dessert even. The chick pea n avocado are great toppings imo. I love avocado toast with homemade Everything Bagel seasoning that I always have on hand. The chick peas can be mashed with some homemade mayo or caesar for a nice sandwich filling. I would have the caesar pasta cold for 2 or 3 of the lunches and get some eggs with the money I saved from getting just 1 bread. Tuna n egg pasta salad is my ultimate comfort food. Egg sandwiches or egg on avocado toast would offer more variety and be super satisfying to my palate!! I would also add some windowsill herbs and green onions liberally! The savory pumpkin pasta would be great with some sage, too!! Again I think that you did a super job and I have practically everything on hand to recreate your meals so I appreciate this extra!! Pumpkin is a really good soup thickener. Just adding it to a bean and veggie soup or pasta and veggie soup makes it feel more rich and filling.😋
I’m definitely going to make the creamy tuna Caesar pasta. I know it will be good.
You can actual add the olive oil & garlic powder and then a very thin layer of olive oil. Then, place in the taster.the powder won't come off the bread. Once it cokebout of the toaster another brush of olive oil & Italian seasoning salt & pepper. You will gave c to cook it for less time because you added the oil first, but it make a huge difference in taste.

You can get all the salmon red, or pink for half the price, at Dollar General all day long, less expensive than Wal-Mart.
I have to watch the carbs because I'm borderline diabetic, but I hadn't thought of using pumpkin puree as an alternative for like a tomato sauce. I might substitute dry beans (maybe chickpeas), spaghetti squash, some kind of frozen vegetable for the pasta in that last recipe.

After watching the video, My first idea was to make a cold pasta salad out of that tuna and pasta and Caesar dressing. That would make a great lunch selection also. And don't forget avocado toast for breakfast. You sure don't need three pieces.

3 pieces would be necessary for a man.
My opinion, you could have left the salade dressing, pumpink Filling and get only one bread and you could have been been able to add some eggs and grounds turkey for more proteins.

If I cut one in half and leave the seed intact inside the other half it seems to help. I refrigerate it with open face down and in an air tight bowl.

Try great northern or navy beans. The longer they cook, the creamier they are. I love hummus but don't appreciate them whole.

Put the cut avocado in a container with water and some added lemon juice or vinegar - either will work to prevent the browning

Nesa, they don't sell dried chick peas at this Walmart. Kroger has them for $1.49 a lb, but if I were doing this at Kroger it would take me too much over $15.

Perhaps you would consider doing a video on a month or 3 months, relying mainly on pantry stocks and a small weekly Budget to just get produce, milk, eggs etc. Some items are much cheaper when bought in bulk like rice and dry beans. I just think that would be interesting.
