No, don't trim it. Just pleat or gather gather the arm hole length of the sleeves

Any Medium-weighted woven fabrics will be fine. I used a cotton fabric that was gifted to me by @minerva. Medium knit fabrics that doesn't have more than 20% stretch should be fine too, but if you're considering using that, you'll need to adjust the measurements slightly as the pattern was for wovens.
