In the final example you need to reverse the flow so you can feed raw materials & pick up finished product from the ends unless you have a lift truck alley down the sides otherwise you r operators(s) have to worry about getting struck by the forklift.

Agreed. That would be much safer.
So, the lean layout is to improve the relationships between the man and the steps, to optimize / maximize the production capability.
Just hire a sub if your product has no demand in 5 years, investment-zero.
