In the 80's I worked in a kitchen that needed six of these to be cleaned and cut into 10oz steaks each morning. I remember it well, though you remind me of all the little bits of fascia that are easy to miss. I never worked with Halal meats, but it seems like it looks healthier (no color dies) than what I cut up in the 80's. Thank you for sharing.
