Hey there!...is this recipe the same if I wanted to make fermented apple sauce.I am a little confused because most ferments require what your fermenting under the brine ...is it possible to make the apple sauce without the airlock because what I have is just a mason jar with a plastic lid on...would mold form if I used a jar with a plastic lid instead of an airlock and is it necessary for it to be under some brine?

Hi! So, you can definitely make fermented apple sauce using a similar process. You could even do without the fermentation lid, however you really would need to keep it below the brine. You could try for example, using a cabbage leaf or a smaller mason jar to push everything below the brine level in your fermenting jar.

@@FermentationAdventure what would be the brine in that case? Can you share a recipe on that on here if that’s okay?..because in cabbage it’s understandable the brine will be salt brine I wonder where all the liquid would come from To make a brine ?

If you blend up a juicy apple in a blender, you should get quite a bit of apple juice which could be your brine. If there isn't enough natural juice, you could add just enough non-chlorinated water to cover the apple pieces, and then add something to weigh down the pulp just to make sure.
