How to Cure and Smoke C-Link Sausages | Harry the Horse BBQ

I have not been to Kreuz Market in Lockhart, Texas to try their original sausage recipe. This sausage recipe is not intended to replicate the Kreuz sausage, but is more inspired by Kreuz Market. Kreuz sausage is 85% beef and 15% pork, and the only seasoning used is salt, pepper and cayenne. This recipe combines the classic flavors and styles of an old school style sausage (i.e. c-link shape and simple seasonings) with the techniques of the new school style of sausage making (i.e. milk powder binder, curing salt, cold smoke). Shoutout to Brad Robinson of Chuds BBQ and Cole Parkman of LeRoy and Lewis for inspiring the resurgence of this style of sausage. C-Link Sausage Recipe
2 pounds pork shoulder
2 pounds mock tender (beef chuck)
1 pound pork fat
68 grams milk powder
35 grams kosher salt
15 grams coarse black pepper (16 mesh)
6 grams granulated garlic
6 grams granulated onion
5 grams cayenne (or sweet and spicy paprika)
227 grams cold water

    Looking awesome and delicious !!!! I’m in south central Saskatchewan, Canada and I can’t even get the Labbat Blue light!!! We have Labbat Light and Labbat Blue but not Blue Light. Crazy!!

    Great videos - been looking forward to this one - c links are slow to make but now my go to sausage linking method - if you want to hang them next time - just get some metal rod or tubing cut to the length of your top shelf brackets - then hang them on the rod/tubing - enjoy the long 3 day weekend with the q and Blue !
