There is a good chance that this is turned off on the SharePoint Admin portal: office365atwork.com/admin/manage-sharepoint-subsites-creation/
Your videos are so good. Simple and direct to the point. Question: What is that toolbar on the very top of the Sharepoint screen? Some kind of tool? (see it on 1:33).

@@szymonbochniak, I got it. It confuses me because of the (ON) icon as well as the little (tool) icon in the "Toolsbox" menu option. Thanks.

@@szymonbochniak I'm an EXO admin starting to learning SPO. Learning how to manage subsite permissions brought me here. Glad to find my instincts were correct - it's better NOT to make subsites to start with. 🙂
