    While I love the taste of tofu, I only allow myself to eat it very rarely due to the health ramifications. I wish I could get it in all my Asian food but that's just not the way it can be for me.

    My roommate went from "sorry, no" when I'd offer him some tofu I made to "can you please make that [tofu dish] tonight?" in just a few months. He loves it now! He just needed to give it a chance and try it a few different ways. His favorites are crispy tofu with a soy-sesame-ginger sauce or smoky pan-friend tofu seasoned with gochujang and cooked into a panini with kimchi.

    Kelsie Snyder lol sadly I hate bean curd. Tried it twice at 2 different restaurants. Some parts of it reminds me of that gross crispy edge stuff on the edges of an omelette. (Like an over cooked omelette)

    Vegan Living 24/7 bean curd is just another name for tofu.. So they probably cooked it wrong. :p

    So an explanation of the freezing thing... theres so much water in tofu so when you freeze it, ice crystals form and create air pockets which makes it super spongy and absorbent. That's the trick to restuarant style tofu

    An important thing to note is that if you use tofu with the coagulant magnesium chloride (nigari) versus calcium sulfate in this freezing method, it will create an even better meaty layered texture

    @@gravyall0va Do you coat the tofu with nigari and then freeze, or coat after freezing? And how long do you normally keep in the freezer?

    @@albo181 I'd think wrapping in saran wrap then putting in a bag is the best way to go before freezing. That's what I do with my veggies and fruits that I freeze.

    You can get the same effect by deep frying (or shallow fry + flip) the tofu. This is what Asian restaurants do.

    I never press tofu, the closest I've ever gotten to "pressing" tofu is when I crumbled up the tofu to make eggless "egg" salad. I use hard tofu.

    One video blogger just quickly presses her tofu in a clean kitchen towel. Probably a good idea to press if marinating.

    The first way I started using tofu was to mix soft tofu into my morning oatmeal. It gives the oatmeal a more pudding-like texture, which I like, and adds more protein. I still make my oatmeal that way.

    Crispy tofu turned out PERFECT! I didn't have to freeze, thaw, dry or coat it which is amazing! Thank you! I am SO glad to learn how to cook it better after trying for months

    something that i learned,and i don't know why it blew my mind because that should be basic knowledge. BUT when marinading a tofu piece, don't use a oil based marinade, because tofu has a high water content, even after being pressed. Oil an water don't really mix. So by using a water based marinade, it will absorb flavours a lot more

    I use tofu for smoothies, (banana + soft silken tofu + strawbery or other fruits) yum For creamy soups (I blend my veggie soup also with soft silken tofu) Roasted for sandwiches (veggies + roasted tofu + olive oil or vegan mayo) Scrambled tofu in the mornings I love tofu

    Thank you so much for doing this video. I live in a region of the United States, Appalachia, more specific southeastern Kentucky where not too many people use and cook tofu.     @@karoma5805 I gotta say, in a year and 1/2, I've lost 82 pounds, reversed my diabetes, got up and going after sitting in a chair for 4 years with arthritis pain so bad I could hardly walk, pain is so much more manageable, off 7 of my 9 medications. I don't have health issues anymore. One med I'm taking is cut in 1/2, that's for sleep, which being almost 60 is kinda normal unfortunately, the other is my thyroid that I can't seem to fix no matter what I do. But I can live with that! I'm not vegan, however. I've settled on a Mediterranean Diet for about the last year. It works great as long as I stick with it. When I don't, back come my problems. I can't stand tofu though lolol! I don't care how it's cooked I can't stand it lol! But there is hope! It took me a year and a half to get myself under control, but there is hope!! I stick with mostly veg and fruit, whole grains only, no white flour, no white sugar, only honey or pure maple syrup for sweetener and that only sometimes, and then mostly seafood, some chicken or turkey breast meat. That's my diet! It's working well! Thanks for asking Karo Ma!

    @@karoma5805 I did go vegan for about 4 months, then started to add animal products in 1 at a time and slowly so I didn't get the symptoms mixed up going too fast. That's when I found out what I could and couldn't have to get my arthritis pain back. I found things like I couldn't have much in dairy each day, only about 4 ounces does it for me, I can't have more than 1 egg a day, I can't eat the fatty portions of any meat. Pork and beef went totally out the door. Cuz if I have any of that, my pain is back. If I eat white sugar or white flour products, I'm in pain again the next day. So it took me about a year to figure all this out. But now that I have it down, I can live. I still have pain, but nothing like it was and it's manageable without all the drugs now. I wish blessings on your mum!! I hope she can find the answers she is looking for. Cuz living like that is miserable!! I get it!!

I am determined to improve my health without relying on meds so you have encouraged me thankyou :) It is a process and it does take time but I've learned that the more time you take to try is the more time you have to live :) Have you thought about a youtube channel of your own?

    I’ve been trying to cut down on my meat and dairy consumption for health reasons and this really me showed how many different things I can make using tofu. The vegan ricotta idea is genius

    When I stopped eating meat 2 months ago I lost a lot of weight by eating tofu and going vegan. I swear by tofu when I tell ppl it tastes amazing when it's seasoned well.

    Good morning and thank you so much for this video! I do buy a lot of tofu and use it many different ways my husband and I are 60 and62 years old and have been vegan for almost a year! We have grown to love tofu and it is through a lot of your videos that we have begun to use it different ways. I made tofu and vegan gravy for dinner the other night and my granddaughter said oh Nana when will you make me more white steak LOL :-)

    I knew this was here, but finally broke down and bought some extra firm tofu. I am totally trying the crispy type tofu with some sauces. I'm trying to increase plant based meals and this sounds fantastic with some veggies and noodles or rice. Very good explanation on everything and clear as can be. You are an awesome teacher.

I have a very small channel under a different name, never took off, but I know talking to a camera, projecting yourself, AND doing something educational. Hard combo. This month bought the extra firm but just kept slicing off pieces and it disappeared quickly before I could be creative. Now I am going to have to buy a few types.     I'm an old pro with tofu. *BTW: Definitely buy organic tofu to avoid the RoundUp.* I drain firm tofu for at least 24 hours before slicing, coating with sesame seeds and grilling on low in a dry stainless steel pan until golden brown. It really concentrates the flavor of the tofu; has a great texture, and the sesame seeds add a great crunch and flavor of their own. This week, I broke out of my tofu box and put my hand to making seitan. I followed a basic recipe and simmered it in sauce instead of the recommended vegetable broth. It turned out great, and it has a whole different texture buzz going for it that the grilled tofu. It's a nice addition to your meatless dietary arsenal. I highly recommend it.

    Tons of foods are fortified with b12. Low b12 is not a "vegan problem." I had much lower b12 when I did eat meat. Which also took affect on my Vitamin D and good cholesterol. Now my labs are awesome. You can eat tons of meat and be low in b12. there is more to it than you suggest. Also, the b12 you get from your meat was from the animal getting it in their diet. So, I prefer to get mine straight and not second hand from an animal.

    Aw, a little meat isn't bad for you or unethical. In the same way that cake isn't. ;) It's definitely not something to eat all the time though, especially if you aren't getting lots of exercise. (Alright, now here comes the anthropologist! Let's talk about some technologically primitive human societies and their dietary habits.) Primarily meat eating societies tend to be a lot healthier than vegetarian ones. I hate that "fact" though because it implies a causal effect where there is none. (I once saw an educational speaker use it to try to convince people they should eat more meat, and ooh, I was mad!) Primarily meat eating societies also have to chase down their dinner, and it's that exercise that keeps them healthy, and eating less sugar (without proper dental hygiene to combat the effects of that sugar), NOT the fact that they eat so much meat. Overconsumption of meat without sufficient exercise is a HUGE health no no! If you want to be healthy, get lots of exercise and take good care of your teeth (as it's dental problems that are the main health risk with naturally occurring sugars in plant foods). That's it, that's all. When we transitioned to farming, rates of illness went through the roof because we didn't know yet that we need to clean our teeth properly to eat primarily plants. The dentist isn't lying to you, fam. You really can get seriously sick from not keeping your chompers clean. The ickies don't stay on your teeth... they end up all throughout your body and can cause serious health issues. And when it comes to meat... either make exercise a large portion of your life, or treat it like cake... something to have on occasion, but not something to get a large portion of your nutrition from. And if you do love meat, please make an effort to reduce your consumption a little for the sake of the planet, and to switch to more efficient meat sources (like chicken or pork instead of beef) to reduce your environmental impact. Also, I should probably close with publicly acknowledging that I'm a bit of a hypocrite when it comes to this, because ground beef is the only meat I like. :P I do eat it quite rarely though (we're talking once a month or so), so let's call it even. And then ignore the fact that I don't exercise and often skip flossing... b-but, I swear, I still know what's best for you! XD Ahh, healthy living is easier described than adhered to, eh?

    Im not even vegan and she got me excited to try this out! I didn't know Tofu was so versatile. My first exposure to it was what I now know is "Soft Tofu" In misu soup. My sister likes to try different Asian recipes, and that was my first experience. I assumed all Tofu was soft like that. I didn't know there was so much diversity. When meat eaters, like myself, think of Tofu, we usually assume it's this boring, bland, white stuff. I didn't know it could absorb flavor like a sponge. I still love meat, but Im going to incorporate Tofu into my diet and try some of these recipes. Your last video, vegan shopping on a budget, inspired me to go shopping, and I bought all of the ingredients you bought in your video, except the broccoli. I also bought Tofu, not knowing exactly what to do with it, which brought me here. OH! When my sister made Misu soup for the first time, I wanted to mimic a morning time soup with Tofu, thats why I bought it. I bought the wrong type. I bought firm and extra firm. They didn't have any fish broth, so I bought vegetable brought as a substitute. I guess it's not really Misu soup if I substitue the veggie broth. Im going to cook the etra firm tofu up the way that you did, and drop it in my soup with some onions and carrots, and maybe pasta.

    To be fair, tofu really is white bland stuff. XD I just tried tofu for the first time and compared it to cheese if cheese had the blandest flavor ever. It was pretty gross. But all I did was take it out of the package and wash it off, cut it up, and threw it into something. So it very much still had the tofu flavor. I still have a package left so I want to try putting it on a pan and cooking it and see if that does anything for me.

    Ricotta for vegan lasagna: 1 block firm silken tofu 2 TBSP of egg replacer (I use aquafaba, whipped) 2 TBSP of nooch or Violife parmesan 1 TBSP of parsley Roasted garlic to your taste 2 tsp of salt Add all ingredients to a food processor or high speed blender and whiz it up. Use it as you would for layering lasagna. Enjoy

    Soy contains a lot of phytohormones that act similarly to estrogen. Good to counteract menopause but a friend of mine has polycystic ovary syndrome slo she has to avoid it entirely. It is not bad for a healthy body but with some medical conditions you have to be careful.

    Tofu has been assisting me with shrinking my fibroids. I used to be afraid of soy but I started doing my research and eating tofu and I have not experienced any pain or excessive bleeding during my periods since I've started eating it. I'm certain the phytoestrogen is the cure!

    Yes, ouch! That will scale off your Teflon (who is still using that?) before you can say 'tofu'. Get a nylon/silicone or wooden spatula or switch to a cast-iron pan.

    There is nothing wrong with modern Teflon. The bad chemicals have been taken out and it's even stronger than before. You actually can use metal utensils on modern Teflon, however they cannot be sharpe ones. Says right on the label. No knives etc., but a metal spatula is o.k. Ones with smooth rounded edges only though, no sharp spatulas with square edges and pointed corners. I use a metal one on mine now and then (when other plastic spatulas are dirty) and no problem. I am gentle with it though! I don't scrape/rub the pan with it, just flip.

What the real worry is, is aluminium dust and what we breath in. It's like the paranoia around aluminium foil, it's harmless.

    Love the video (and I love tofu,) but general PSA: Soy is not bad for you and GMOs aren't bad for you. I get my nutrition info form the Harvard School of Public Health website (Google: Harvard Healthy Plate and you can search their nutrition source for soy.) and UC Berkely (Google: UC Berkeley GMOs.) I know people are skeptical about what to believe on the internet these days, and rightly so, but University-Sponsored Peer-Reviewed Research is about as non-bias as it gets.

    I agree that GMO is not bad for you, it's well proven, but Soy is absolute garbage. It's been more than well proven. Not just by Science, but also anecdotal evidence. Men should avoid it like the plague! Contrary to what idiots/Vegans think, it does absolutely cause men to have estrogen problem. Man boobs, limp dick, PMS symptoms etc. etc. The evidence that Soy is bad is overwhelming.

    Soy isn’t bad for you, google the studies and make sure they weren’t funded by organizations benefiting from the consumption of meat. As for GMOs, one thing I found out was that Monsanto genetically modified its soybeans and corn so that it wouldn’t die from Roundup! Wow. Here I thought they were modifying stuff to make it taste better, grow bigger, etc. Food for thought.

Women, it's debatable because of how the Phytoestrogens can be helpful to them, but there is nothing good about Soy for men. There are soooo many better foods out there for people than fucking stupid Soy. Go educate yourself.

    I am so glad I came across your videos! I have been trying to go plant based but get discouraged as to what to make. Love your fun casual style. 😄. FYI, I attended a Food Summit with Food Revolution Network and the experts (Dr's and Specialists) kept saying that it is totally a myth about tofu being bad for you. In fact, they kept touting the benefits of tofu to ward off cancers and brain disorders. So go tofu!

    From my limited understanding, it is only in animal studies during which they experimented with exorbitant amounts of isoflavones or whole soy per amount of body mass which is considered unethical to duplicate in humans, that shows that soy is “bad for you.” Unfortunately, the majority of research on the health effects of soy are on animals. Looking only at research on humans shows that soy is nothing but beneficial for your health. One study I heard about in passing was of a group of men consuming enough soy to equal about 46 cups worth of soy milk each day which resulted in gynecomastia and other female associated characteristics which quickly dissipated after ceasing such high quantities. Soy is actually recommended by many endocrinologists and oncologists for the treatment of cancer and hormone therapy.

    I don't press my tofu, either! If I want to fry it easily without it breaking, I just buy extra firm or super firm tofu. I have lots of friends who talk about the time they spend pressing tofu and they even buy little gadgets for it. I tried it. I did not feel like the effort made enough of a difference for me in the final product. I'm not very picky, though, and I like tofu as it is. I'm a fellow straight-from-the-package-is-okay-with-me and smoked-tofu-sandwich vegan! :) Silken tofu can be used to make pudding, custard/pudding type pies, ice cream, and vegan mayo/dressings. Even "tofu haters" cannot detect the tofu in my chocolate peanut butter pie, using a silken tofu chocolate pudding base! I use firm tofus for stir fries, scrambles, and general cooking. I particularly like the super firm tofu, because it's easy to work with and it has A LOT of protein! You can get one from Trader Joe's (their brand) or from WildWood Organics. There might be more brands, but those are the two I find easily. Freezing and thawing tofu is a good way to make tofu "chicken" nuggets. I used to do that, but I totally forgot about it. they turn out good! I recently saw a video that suggested doing a double freeze/thaw process to make the texture extra meaty. Thanks for this video! :)

    Just like gluten, soy can be unhealthy for only some people for specific reasons, whether it be allergy, intolerance, medication, or other medical issue. But if you are not a person with those specific issues them soy has no unhealthy effects. Its just like any other food out there, if you eat an excess of anything it can be unhealthy but the food itself isn't naturally unhealthy. You can eat as much soy as you want as long as you keep a balanced diet. BUT soy can affect people on certain medications (personal experience with hypothyroidism on Levothyroxine) so PLEASE do research if you start having ill effects while consuming soy. I still eat it but it has to be minimal and only in certain forms or it makes me sick and exhausted.

    SC, I recently read a study (i think it was on PubMed) where they found that eating soy and not having enough iodine caused issues for persons with Hypothyroidism.

    👍 any condition that makes you react badly to too much estrogen would also be a reason to be careful about soy. Didn’t know about the thyroid involvement though, thank you!

    tiff2106 that’s actually wrong because tofu doesn’t contain estrogen, it contains phytoestrogens which is NOT the same.

    CherryJuli agreed, it IS not the same but it can ACT in the same way, especially in conditins like e.g. polycystic ovary syndrome.

    Awesome video! I love tofu so much. I also like to coat in cornstarch or flour, dip in plant milk, then coat it in panko and pan fry it. I think freezing it would be even better for this, I’ll have to try it!

    Celia Agnes It goes a bit weird if you freeze it. Same with soya milk. It doesn't seem to like being frozen.

    sammimitsu I actually tried it the other day and really liked the texture. I squeezed all the water out like she said. I could see how someone would not like it though, it’s definitely different.

    I prefer to freeze it if I’m frying it. I think it’s stronger and more like “meat”. Doesn’t tear as easy.
