That looks yummy. Thanks for sharing my Lady, and may I boldly say that this turned cornmeal recipe is the Island version of the 'AKPLE'...'APAPRANSA' and 'BANKU', native to the former Gold Coast now present day Ghana where I am from...The reason why I love Jamaican recipes, is their connectivity to Ghanaian cookery...I must say that most of your meals are historically Gold Coast derived... We have a special wooden tool used for turning cornmeal, Sometimes, the cornmeal is fermented to raise its probiotic level or cooked straight from powder form as in the 'Akple' and 'banku' recipes, which are served with snapper gravy...The 'apapransa' recipe is cooked with dry toasted corn meal, cooked in spiced palm-oil tomato gravy seasoned with fresh vegetables, precooked beans, smoked shrimp and fish powder, then served in mould form surrounded by steamed crabs. This meal you cooked may be a recipe to some subscribers but to me, it is heritage, culture and history.

In Barbados we also use a special wooden sick made from a special wood to stir it and instead of plain boiling water we boil okras while we continuously stir with the stick it comes out very mellow and smooth . we have it with steam fish or salt fish gravy. I will try the different variations. great recipe

It is amazing how foods are similar but given different names over the world. I am going to try your recipe because I luvvvv me some coconut milk. God bless. tfs.Cheers!!
