How to cook Perfect French Fries like in a restaurant - Best Chips

Making French fries is certainly not rocket science but there are a lot of elements to consider in thriving for perfection. Firstly you want large oval shape potatoes for the best cuts. You want the right size, 1 centimetre or just under half an inch is the optimal size. Smaller and they will be too crisp with more oil, larger they will be too moist and mushy in the centre. You don't have to use a ruler, it's just a guideline, a little less or more won't make any difference. For the oil, you can't beat the taste of beef dripping, but for healthier reasons it's best to use vegetables oils, I like Canola, peanut, sunflower oils. You can use the one you like, but the secret is that it has to be fresh. You can use it several times but the older it gets the faster it will reach smoking point resulting in darker fries with less crisp. Use a large pot and never fill the pot to more than half full. Use a good deep fryer that contains a large quantity of oil, otherwise make them in small batches to avoid the oil cooling down too quick once you add the fries. I have included a chili salt recipe to bring them to another level, but if you're a purist at heart, then simply use a fine salt.
You can also blanch the fries then refrigerate or freeze for later use. But if you want them straight away, let them cool down before the second fry.

    I tried it but I took a bit of a twist. I cut the potatoes evenly, and then put them in a bowl of cold water for 15 minutes. Then I put them in a pot of hot oil for 30 seconds. After this, I put it back in a new bowl of cold water, for 15 minutes. Then I dry them with either a rag or napkin. After this I put the fries in the freezer for 10 minutes, then put them back in the pot for 8 to 9 minutes, and they come out crisp and delicious, of course with salt. My secret seasoning consists of chili powder, onion powder, and parsley flakes with some salt added to it. Just sprinkle that onto the fries and it is delicious!!!! I really recommend my way and this person's way. Both extremely good flavor and appearance-wise.

    Made French fries using your recipe and they turned out to be the crispiest French fries I have ever made. I just love the recipe. And for all those who have commented on his precision, I just have one advice: Being precise is your own choice , however assuming you watched this video to learn how to make french fries; I must say this is THE BEST method I have ever come across, definitely give it a try.

    I like the double fry method. In my experience you need to do 2 deep fries for crispy fries, the first fry precooks and draws moisture out to the outside where it is evaporated off in the second deep fry. Here is what I use to get Mcdonalds French Fries at home The way I get crispy fries similar to Mcdonald's: 1) Cut them thin and soak them first in cold water for at least an hour up to 4 hours to get the starch out, ice water is best. You can tell they are good when the water runs clear when you rinse them 2)While they are soaking the last bit bring a pot of water to a boil with some white sugar and corn syrup in it 3)After they have soaked in the ice water turn OFF the boiling sugar water and transfer your fries into that for 5 minutes to pre cook and give them that extra flavour most people are missing in their home fries. 4)After 5 minutes in the shut off water take them out and pat them dry, at this point you can freeze them for later use or cook them right away. (I always do a ten pound bag of Russets all at once and freeze the leftovers for later use then make more after those run out.) 5) To COOK them you need to do 2 SEPARATE deep fries this is essential for crispy fries at home, the ones Mcdonalds gets in the store have had all of this done to them up until that point so they only need 1 cook in store 6)2 minutes in 350-375 oil (I have a little deep fryer so I leave it on 375 to try and keep the temp up) then take them out and let them cool until they are cool to the touch, it is beneficial to pat off the oil and moisture that seeps out as this point but a lot of the time I don't for the mess and to save paper towel. 7) After they have cooled back into the same temp oil for 5-7 minutes depending how thick you cut them Some tips for the best fries: 1)Russets are best 2)Cut them thinner than you think you need to if you like them like Mcdonalds/thin, I always used to think they will be too thin but you figure it out after a few times 3)If they are not staying crispy after you cook them that is probably because your oil is too old/dirty. NEW oil is best for crispiness and USED oil adds more flavour to your fries, the BEST fries at a Mcdonalds are not right after they change the oil but they are the crispiest. The BEST fries are about 1-2 days after its been changed depending how busy it's been, they are still crispy but have more flavor. Good luck if you try it out let me know, also freezing them draws even more moisture out so fries that you have frozen are even better than fresh.

You could also think he’s an art director and video editor by how masterfully he makes his cooking videos.     They look delicious! I've recently perfected my own fries by [lightly] quick tossing them in flour before deep frying, giving them a nice texture. Or thought I'd perfected it. ☺️ I can't wait to try this recipe; it is probably a bit healthier, and the oil will stay fresher/cleaner than when I pre-season. Yummy, TFS!

    @ No, you have to tap the excess off, and they’re fine. There are probably a few more helpful tips online, that helps the flour stick to the potatoes. Turns out that cooks and chefs throughout the nation (and likely beyond) do this exact technique. They are called “battered fries”, “crispy fries”, etc. Happy learning/discovering…Enjoy! 🍟

    I’m from Belgium, masters of all time fries, and here’s the tip: fry them first at 170degrees celcius, let them rest for a moment then fry them a second time at 190degrees celcius until golden brown. You’re welcome

    Do you reuse the oil again for cooking other stuff? I'm usually reluctant to deep fry things because I dump the oil away and it's an awful waste....

    You need to filter the oil after each use, and yes it can be used many times. Never go over 350F or it won't last as long. Never use a smoking oil,

    Probably not. Preseasoning was tried by the folks at Modernist Cuisine and was found not to be of value. They tried both salt and vinegar infusion and then said " the fact these are not in our book ( the 800 dollars 6 volume set ) tells you all you need to know". They did have success with starch infused fries but most people don't see the point.

    I think most french fry aficionados would question that. Boiling as opposed to hot water blanching and par-cooking will probably yield fragile potatoes that will fall apart when you try to work with them. Heston says boil but he's making chips, not fries, so he can get away with it. If you boil a russet potato you'll make a tomato out of it as well. You'll up its water content and when you plunge it into hot oil you'll get a volcano.

    Double frying is correct, but you should blanch at a high temperature. Low temperature makes potatoes greasy, so I would not even blanch at below 300 F. I suggest you set the temperature at 350 F or above, blanch for 1 minute, cool, and fry until golden brown color. That will give the crispy texture just like Buffalo Wild Wing.

    You wash them like you do rice, to reduce the starch content. You only use an extra litre or so of water, and that water can then be used to water plants, etc. If you don't have plants, some neighbour will and it provides a good opportunity to meet them! Maybe share your Fries with them?

    I cook THE best French Fries in Air Frier, it crispy, perfectly salty and you still can taste that it’s a potato under that crisp, I moved away from deep fry foods when I bought my air frier 2 years ago and never look back.
