    You should look up some swedish or american videos of how to cook, peel and eat crayfish and you would learn some interesting things on how to do this...

    If you get the middle paddle in its tail and twist left and then right and then pull it takes the whole guy out in one go and if you don’t purge by washing two to three times by immersing in cold clean tap water then you are going to need quite a few bog rolls

    They seem to be a lot of hard work for little reward but at least it gets rid of a few more of them and pushes up the price of Andrex shares if you eat one that has not been purged! So if you do not purge the crayfish it purges you haha. I think I will just keep to fish and chips (and you get free newspaper if you want to wipe your bum later. Just watch out for the salt and vinegar cos it will sting!

    If you grab the middle of the tali and twist half a turn you pull out the entrails. Much easier.

    Mark, I've just cooked my first batch but I don't know if I'm missing something. They don't seem to have the flavour everyone raves about, in fact they are tasteless. Well purged over 3 day's, chilled as in your vid, boiled in brine (no other addition) 4 mins. I've got some Shwartz Cajun mix, is this right stuff & how to use ? Thanks, Frank.(E. London)

    I have been catching brown crabs, shrimps, lobsters and crayfish for years. I cant tell you now that any commercial fisherman in the UK would laugh heartily at the PC idiots who "place their catch in the freezer" to ease their passing. Its hilarious.

    I'd rather just be boiled than frozen, defrosted, and boiled immediately after that. If you really care just stab them through the head, but theyr'e so small they'd die in seconds from the water anyway.

    So you don't soak the live crayfish over night in clean water to purge them of impurities before putting them in the freezer ? Everyone I've spoken does this but now it seems unnecessary 😊

    It clears out the GI tract, but that is removed either way. I have done it both ways (I have a river in my yard in the US) and haven’t noticed a difference. If I have time I purge them.

    Hi Mark, Good useful vid. Could you please tell me, if the environment agency issues me with a licence to trap crayfish do i need to ask permission from the canal and river trust first? If so it said on their website that they normally don't give permission unless it's for scientific research or some think to that nature, is that correct? If so we are just going around in circles hence why there is so many!!!!

    5minutes in the freezer 5 minutes in salty boiling water. Takes 5 sc at the most to peel them. crush the claws in ya teeth. That's why we have teefs.

    Hi there, we don’t purge because of stress on the Crayfish and it removes too much flavour in our opinion.

    @@marklees5959just put them in water with an air stone for 24 hrs. If you think it’s removing flavor...it’s actually removing the the GI tract contents.

    i understand what you mean - but everything in the head n leg bits is just watery-nothing if you try and eat it as-is. However, ALL can be used (along with shells) to make a very delicious soup or sauce.... boil all the "extra" bits with a can of chopped tomatoes, add salt n pepper. Remove shells when cooked, then blend the soup/sauce (if you wish) and finish with a knob of butter, a good "glug" of double cream, and garnish with basil or parsley. Mop the lot up with some oven-hot crusty buttered bread......BEAUTIFUL! Alternatively, use the same soup as a sauce over white fish, green veg, and a staple of potatoes or rice
