How to cook Korean Japchae/Korean Glass Noodles/Stir fry vegetables

JAPCHAE - "mixtures of vegetables" it describes both the dish as well as the method with which it is prepared. Generally, the term refers to vegetables (namul) stir-fried with meat.
Japchae is made using sweet potato starch noodles, aka glass noodles. These delightfully chewy noodles have a low glycemic index
INGREDIENTS
500 grms potato starch noodles/glass noodles
1 big carrots
2 red bell peppers (red/yellow)
250 grms shitake mushroom
1 onion big
1 cup chives
250grams spinach
1 tbsp dark soy sauce
3 tbsp sesame oil
SAUCE
½ cup brown sugar
½ cup soy sauce
¼ cup oyster sauce
MARINADE
400grms beef loin
4 cloves garlic
2 tbsp soy sauce
1 tbsp sesame oil
GARNISH
2 eggs
Sesame seeds (optional)
