I tried the bean recipe today, I had all the ingredients so I gave it a go. I usually make beans with meat, but I didn't have any in the house. They cooked up nice and tender in 4 1/2 hours . I had some sweet chili sauce in my fridge I put some of that on them and they were so good. I used the sweet chili sauce trying to make it like baked beans.

Thanks Eric, just so you know whenever I want to cook beans now I go and find this video to refresh my memory. I think it's a good simple cooking process (recipe) for dry beans that can be used as-is or other stuff can be added like onions or other types of beans if I want to try variations. I had these dry beans someone gave me sitting around for a few years and didn't know what to do with them, and same story with a slow cooker I hadn't used in years. But now because I found out it tastes so good, and its so easy to prepare it's something I eat on a semi-regular basis. I appreciate you, good job :)

For the past 30 years my family has randomly housed and fed homeless folks. We also, at one period of time, took in young people from the Christian Church, ones separated from their parents, for a variety of reasons. Naturally we became creative in grocery shopping and planning, preparing and serving meals. Being busy with our careers, our time was as limited as our resources. Breakfast generally was oatmeal, toast, apples or oranges. They were responsible for making their own lunches. Plenty of day old bread, lunch meat lettuce and tomato. Dinner was mine. Crock pot beans, baked chicken and rice was what I "fixed" 5 out of 7 days. But I offered green peas and green beans, corn and spinach any time anyone wanted them. And hamburger patties and pork chops, ( smoked on the pit) the nights I didn't cook baked chicken. Baked chicken was so easy. I just washed and seasoned many drumsticks, thighs and 1 or 2 breast. Put them in a LARGE cooking dish, cover with foil and place on the shelf in the refrigerator reserved for it. (Everyone knew nothing else got to use that shelf). Whoever is home at lunch' has the responsibility of setting oven and putting in chicken. Low heat, slow cook till around 6. And then there's the beans. There are 3 crock pots and pinto's were in one every day. Navy, Northern and Lima were cooking in one of the other two. I just use salt and onions, but you've given me some good advice and I will take it. Sometimes I did and do put in meat chunks, but on those nights, that, with rice is the meal. And speaking or rice, we make it in a rice maker or a pot. No specialty there, anyone can make rice. But I'm no cook, I do believe you are. Thanks for the video. Hope to see more.

Making this today. Didn't mean to but had soaked too many beans and only needed half of them for the recipe I was planning to use. I used that recipe for half the beans and have the others cooking now in my crock pot with all the ingredients mentioned. Kinda freaked at putting SUGAR in there as I don't like sweet beans, but jumped in anyway with it. The salt didn't bother me at all. LOL. Looking forward to the end product. Thanks!

Thanks for this recipe! I’ve cooked twice using this recipe. I used hocks/smoked turkey necks instead of fried meat grease though. However, they were great each time. People have different ways of doing things but one can always add suggestions to make a recipe better or provide a better way to cook it-so Eric share if you like and ignore the stupid, negative comments. I appreciated this recipe.

One of the reasons you soak dried beans overnight in salty water (brine) is to prevent them from bursting while cooking. Looking at your final result, a LOT of your beans burst and created that white mush. The taste was good I'm sure. Also, using chicken stock/broth to soak them instead of salt brine gives amazing flavor.
