How To Cook Curry Pigeon Peas

Тәжірибелік нұсқаулар және стиль

Learn how to cook curry pigeon peas (using frozen peas), in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com This delightful vegan dish is not only incredibly tasty it's also gluten free (see comment below). Using a traditional method of cooking vegetarian curry in the Caribbean, we'll make use of frozen pigeon peas to make this classic Caribbean curry dish.
You'll Need...
2 1/2 cups pigeon peas (green)
(water for boiling the peas)
2 tannia (potato will work too)
3 bird's eye pepper (bird pepper or any spicy pepper you have/like)
1 small onion
5 cloves garlic
2 tablespoon coconut oil (veg oil works great)
2 - 2 1/2 tablespoon curry powder
1/4 teaspoon black pepper
1/2 teaspoon cumin seeds (geera)
2 tablespoon shado beni (divided)
3-4 cups water
3/4 teaspoon salt (adjust)
Note Shado beni is also known as Culantro. If you cannot get it, feel free to use cilantro
Important: If doing this recipe gluten free, do go through the full list of ingredients to make sure they meet with your specific gluten free dietary needs. especially the curry powder you use as some may contain flour as a filler.

Here in the US, depending on where you get it from, in the Latin markets Tania is called Yautia or what I believe is one of the African names that some of us know it as in the Caribbean - Malanga.

High Chris, the fresh pigeon peas are very [opular in India, in A LOT OF WAYS. We rarely use dry whole pigeon peas, we use them fresh, green or frozen. We normally use the dry, split hulled pigeon peas called TOOR/TUVAR/ARHAR DAAL. That is kind of staple in half of India. This is lovely.

We can only get dried here in the UK as far as I know in fact they are a local delicacy but always dried.
