    u actually wanna position the vent over the meat is that the smoke travels across it. the stock thermometer on the weber kettle aint great.

    I absolutely love George’s work but if you want genuine Texas barbecue taste you can’t use that super sweet brown sauce, that’s Kansas City style barbecue sauce. Texas barbecue sauce is tomato based, it’s a lot redder, a bit thinner, and way more peppery.

    guys meat market will always hold a special place in my heart, my dad used to take my brother and i there after doctors appointments when we were kids, he managed to get a hold of some of there seasoning mix a few years back and we have slowly been reverse engineering it ever since, it takes those burgers from good to GREAT

    I think part of it is he may be delivering lines to his daughter/camera operator since she's there as opposed to just the camera lens. He gets realtime reactions that way.

    2:16 You want to place the vent above the meat, as you want to pull the smoke over your meat. The way you have it most of the smoke will go out the vent.

    That makes sense but then his thermometer would be on the wrong side. Perils of using a kettle grill for smoking I suppose. External thermometer?

    @@darkwater234 Yeah you can use an external thermometer if you want. The grill temperature doesn't matter much as you want blue smoke over hitting the right temperature. A few degrees isn't going to matter too much.

    Definitely a slow cooked way to make a burger, not surprised that it comes from Texas. Another great way to make a burger slowly and I will add this to my list of ways to make a burger. Love the episode and it always makes me want a Burger, I am a fan of the Juice Lucy .

    The vent should be placed above the burgers to allow the smoke to pass over the meat, not straight out of the grill.

    That is such an insane look for a burger. It's not browned and instead it's got a red smokey hue to it. Looks amazing.

    I actually really like this style. With the airplanes (and birds) left in, it makes it seem a little improvisational, which actually seems to work for George's vibe really well. Keep it up!

    air vent should be over the meat. smoke is going straight up and leaving the grill and not over the meat.

    Today is my 21st Birthday and I cooked a burger off this show, I cooked the Juicy Lucy burger that you had cooked for Babish, here in South Africa we don't have american cheese so I had to make do with gouda, and let me tell you it was amazing, thank you George for all your awesome work and stay safe during these trying times :D

    Wow I moved away from Houston a few years ago. I used to live in the same neighborhood as Guy's Meat Market. Their smoked burger that you had is truly amazing.
