    Just to add on what I've missed out: I have to emphasize that these clams / lala were very, very fresh - they were all alive and moving in the market. Once home (about 45mins), some of them had died along the way, so those had slightly opened up. I still considered them fresh and safe to eat - as I cooked immediately after cleaning. However, if they were already opened up in the market (and not moving), DO NOT buy them as they are NOT FRESH and may cause food poisoning. When clams / lala die, they open easily and after some time, they will rot. These clams / lala will definitely cause food poisoning. So please ensure the clams are alive and moving before buying from the market 😄

    Instead of opening them to wash, i just throw them into boiling water till they open up. Then, take them out to rinse and cook. Anything wrong with this method?

    Hi Jimmy Tay, thank you for sharing 😄 This can be done as well. Firstly, all the mud from the lala is cleared this way. Secondly, adding them to boiling water until they opened up would mean that the clams/ lala is already cooked. When it is served as a dish, it would have been cooked twice, so the clams/ lala would be slightly tough. There's no right or wrong in cooking, as long as you enjoy the food and you have fun cooking. 😄

    Hye this going to be my 1st time cooking clams.I just bought a bag of clamps from the market.Of course they were not moving already when i bought them let alone the seller told me they are frozen item.Is it safe to eat them now?For your information after came home from groceries shopping i immediately put the clams in the freezer.Planning to cook them the next day.

    The easy way is let the lala sit in the freezer for couple of hours before cleaning its, the shell will open up like magic, and the lala are still fresh until you cook it.

    i wash around 2-3 times then put 1 tablw spoon of salt and leaves the lala for 15 minutes then wash again..you can see the mud or 'pasir halus' being remove by the salt

    Hi Joycelyn Tan, thank you for the question 😄 I don't recommend to keep fresh clams and lala overnight, as they tend to deteriorate very fast once dead, even in the fridge/ freezer. It is best to buy them fresh and cook them immediately or after a few hours while they are still alive. Hope it helps 😄

    @Lassi-em9xw. Most of lala sold in supermarket are not so fresh. Usually I don't buy lala in supermarket. the morning market are a better choice. Thank you for the comment 😀😀

    Hi Pawel Domel, they are known as "Lala clams" in Malaysia 😀 They are also known as "soft-shell Asian clams" and "steamers". Hope it helps 😀

    Let for me yo removed mud injust fried without oil.that the easier way rather then open one by one.what happen if u bought about more than 1kg

    Hi mastura abu samah, thank you for the sharing 😄 Yes, that works as well, however the clams would be double cooked if fried again with sauce. I open them one by one to remove the shells with only mud in them as they have the potential to contaminate the food when cooking. For home cooking, 1-2 kg is still okay (for me) as the quantity isn't too much 😄 Hope it helps

    Huge wastage of water. Instead wash just freeze them whole overnight and thaw them for 2 hours. They will open up.

    Hi Cliona Dantis, thank you for the feedback 😀 By freezing them, the clams will die before they are cooked; and their freshness will degrade as they are thawing. When the clams open up, it means that they are dead. I want the clams to open while they are being cooked; which is why I clean them while they are alive. Although it's a waste of water, it's necessary to ensure that there are no dead clams already in the batch, and there's no empty clam shells filled with mud - both of these can cause food poisoning to those consuming them.     You don't freeze fresh products just to get them open up just because you want to save water 😂 you literally destroy the freshness and the quality

    Oh no, you're wasting your time and water to wash each lala this way. Wash once and soak in water with 1 teasp of oil and salt added. Leave them aside for 1 hr, the mud inside the lala will all go into the water if the lala is no dead. If you see any no open at all, that is dead or only mud in it. Rinse a few times under water is clear.

    Hi rebeccafoo, thank you for sharing 😀 Yes, soaking in salt water works just as well. I personally wash each of them as I find that it guarantees no empty shells with mud. With the soak method, I know I'm bound to miss removing the ones with mud when rinsing them. Hope it helps 😀

    Hi Go Johnny Go, thanks for the question 😄 I'm not kidding - I have experienced finding clam shells filled with mud while eating the dish at home; it was not a pleasant experience. Consuming clam / lala with mud may cause food poisoning - something that should never happen when cooking at home. Since then, I've always checked the lala / clams one by one to get rid of those shells filled with mud. For home cooking, 1-2 kilos is still okay (for me) as the quantity isn't too much 😄 Hope this answers your question!

    I also do the same, check one by one. Because don’t wantsame experince like u said. But a bit diff method, first step i soak lala with salt n water about an hour then a good lala will open up itself so we can pick up a good lala. the remaining unopen lala i proceed to open one by .

    Hi Arunima Lal, thank you for the question 😄 Unfortunately, it is a necessity as I need to make sure that lala clam is thoroughly cleaned and not empty shells of mud. Uncleaned lala clams and mud shells contaminate the dish and can cause food poisoning. I would not recommend recycling this water as it is already dirty from washing the lala clams and has a very fishy smell. Hope this helps. 😄
