How to Can Blueberries without Sugar | WATER BATH CANNING

Canning blueberries is so easy and you can do it without adding any sugar! No pressure canner is needed, just a simple water bath will seal your jars right up. Come join me while I can some blueberries.

    I'm new to canning. I pressure canned 38 lbs of chicken and pork last week and had 100% success with the seals. I'm looking to add canning fruit and making jam to my canning arsenal.     Get some Clear Jel, to have on hand, I've had a few not thicken as well as they should, especially freezer jam, you just add a little and stir or shake well to see how much it thickens. It is made for pie filling, I canned 2 batches of apple pie filling last year. Must be good, hub has been using it as jam on his toast. That is not what I made it for. He can use the chunky apple butter and add some Apple pie spices. I do pies instead of cake, as I can control the sugar better, so it doesn't run my BS up. Like my mom use to say you can always add, but not subtract a spice or salt.

    I've never canned blueberries, only put them in the freezer. I used your method, and I'm soooo glad that I did. My blueberries turned out absolutely delicious! They're so much better than the frozen. I will ALWAYS use this method when possible. THANK YOU for sharing!

    10 min all you need to can/boil these berries, also only 5 min is needed once the canning time is up before removing the jars. NEVER TIP THE JARS with the jar lifter when removing from the hot water it could cause a seal to not seal by tipping the jars. The water will be fine on top of the lid, once cooled and checked the next day the water can then be removed. Or place a dry towel over the jars a while after removed from water bath if it makes you feel better but not needed.

    not being argumentative here but I didn't even know about the " not tipping jar " rule and have done so for at least 5 years of canning and I always get a seal. But now that I know about the "rulde" I dont do it. lol but is it really true??

    @@nista4ever lots of people let their jars cool upside down No problem UNLESS the contents are still boiling. But most people accept it as a rule to let the jars cool upright.

    I use distilled white vinegar to wipe ALL my jar rims, no matter what or how I am canning; I personally have better success since I started doing this😉👍

    I would have added some of that heated water to the pan that the berries where boiled in as there was some great berry juice still in that pot and cleaned the pot a bit at the same time.

    Love your stove. I'm going to try to freeze some blueberries if I can get some northern berries. I would put a little of the water in the blueberry pan to rinse the rest of the juice out to top off jars. Beautiful.

    I forgot to comment on something you did that I have not seen anyone else do. You covered your jars once they were set out to cool off. Being new to canning, I had read that once the canning process is finished and the jars are removed from the canner they are to be placed where there are no drafts. With A/C or heat blowing off and on day and night, I thought, where in the world would that be? I've not watched tons of canning videos but quite a few and never saw one person cover their jars---but then I saw you cover the jars to protect from draft. So simple. Thanks so much for including that solution for a non-drafty spot to set your jars. Jesus bless.

    I used to help my mother with canning and she always set the jars on a towel afterwards ( to soak the water dripping and to reduce contact with a cold counter) and covered with a towel to keep them from cooling too fast and possibly lose a seal. I do that still today.

    Great tutorial. Off sugar right now and I just finished picking the last of our blueberries. Prolific this year. I am going to use your sugar free method. I liked seeing the magnet tool that lifted the lids onto the jars. I assume you picked the blueberries yourself, by the scratches on lower arms. I have the same scratches !!

    Blueberries are one of the most acidic fruits, excluding lemons. So they are safe to waterbath or steam can WITHOUT adding lemon juice, unless you want that flavor. Hope this helps.

    I had no idea berries could be bottled without adding sugar. I freeze different kinds, and yes my freezer is taken up with them. Do you use the berries for pancakes, muffins; etc...are they still solid?

    The are still berries but very soft so you have to be gentle with them. But yes you can use them in those things.

    They should be okay as long as the berries were heated all the way through. And if you put them in the jars hot and didn't let them cool down, they should be fine. But maybe use them up first. Blueberry cobbler would be awesome.

    It is more like they are in a blueberry juice, but you can strain the juice off. I hope that helps.

    Because if you leave them on and the seal "let's go", you can't tell if it created a "false seal". That creates spoiled food. When you check your jars periodically to check the seals, you'll find a jar with a broken seal if you take the rings off. It's a safety precaution. God bless you & yours.🙏

    The PH of the fruit has to be acidic enough, otherwise lemon juice would need to be added to jars of fruits that are more alkaline.

    It is a weight watchers measuring scoop. I don't remember where I bought it. It came in a set of three. 1/4 cup, 1/2 cup and 1 cup they are very handy I use them all the time.

    Hi Daniel, basically high acid foods can be water bath canned and low acid foods need to be pressure canned. I always use the Ball Blue Book as my "authority" if I have questions on the proper way to can any particular thing. If you don't have a Ball Blue Book I would recommend getting one.

    Hi Daniel! Both Ball and Amish have great canning books. If you've just begun canning, sir, I would wholeheartedly advise using the National Center for Home Food Preservation for educating yourself, and simple referencing: nchfp.uga.edu/ Have a great time, be safe, and may you and your family enjoy eating much better tasting and more nutritionally dense food from your own kitchen preservation!!

    @@Sunflower139 yes remove the rings so you don't have a false seal and it gets hidden with the ring on.... that's dangerous. Also you can leave the ring very loosely on to protect the jar edges...but best not to.

    @@sandicupp5009 Sugar has some unique properties that mean it can preserve food. It is used in jams, jellies, conserves, relishes, chutneys, cures and all sorts of processes that help to prevent food from spoiling. How sugar preserves foods is quite simple, it is to do with how sugar and water interact. Sugar preserves by removing moisture from the cells of the food being preserved. WIthout moisture, it makes it much more difficult for spoilage organisms to grow.

    just wondering why you even heat up your berries...could you just not pour hot or boiled water over them in the jars, seal and water bath can????

    Heating them first gives better results, some say. They have air in them and heating removes some air and this lets more berries fit in a jar.

    If I was going to add anything for more acid, it would be bottled lemon juice. For my tastes, it would compliment blueberries where vinegar would add a more pickled flavor.
