    I leave mine in roast pieces and then cut them into steaks when thawed out. Reason is that there is less air touching the meat, which will be less freezer burn for long term storage.

    I keep my steaks about 2x4x6 inches, cook them rare to medium rare and then before serving I cut them into bite size strips against the grain.

    Good stuff Guys! I was raised butchering our own animals. From hogs, deer, cows to elk, we did it all. Didn't know it at the time, but mom and dad were teaching us life lessons. Thanks for sharing and I can't wait to see what's next.

    Being born and raised in northern Ohio, we always considered the butchering part.We use a butterfly are tenderloins, which is just every other cut.Is not all the way through in the fold down into a nice little steak

    Love processing my own animals. Every year I learn something different and try to learn a new recipe. Will soon be starting to learn hard salami. Elk pastrami is by far my favorite!!

    Howdy from Wimer! I appreciate you and your video guys, it helps complete the hunting circle. On that note, one time I took all my clean cut off trimmings the majority of which was silver skin and such and ground it up for the dogs. I made a "scrap burger" for myself and was amazed at how good it was. Things that make you say Hmmm! And if you ever do that for your dogs don't feed them frozen bambi meat balls. Mine didn't chew and passed out before I could give her the Heimlich Maneuver. An interesting thing to do to a slinky. She's fine. Thanks guys!

    Great video, I do my own like you. With elk I will make more of the round into roast. I would add one great addition the whole shank with bone and meat in a crock pot is great! Add potatoes, carrots, onions and whatever else you want + spices and cook it for at least 8 hours for 1 shank. After the 8 hrs all you will have is the bone. I cut off the bottom 2" part of the shank that has all the tendons.

    Neck meat, makes great slow cooker meat for tacos. In my opinion.. Great video, Trent. Much respect and love , brother I also save all the silver skin and bones, boil it down for bone broth.

    That sirloin makes great jerky bc of the silver skin. There's a lot more in the hind quarters than most ppl know. The ball roast, the sirloin tip both great roasts and steaks. The top and bottom round r just a small portion of the hind quarter. Such a shame that you put all that "other" stuff to grind. 4th generation butcher. Have always processed all our own game and beef, pork, and fowl. No offense, but learn the actual names of the muscle groups before you start telling people how to cut meat. Glad to c your "kind of" teaching people.
