This style of crawfish boil is call Viet-Cajun. There are numerous variations but this one is very good. The spices used are spot on. You can very the proportions to your preference of taste and spiciness. I have also seen different liquid used in place of 100% water - 50:50 of Sunny D/Tampico and water; sometime I have seen frozen OJ concentrate with 50:50 Sprite and water; fresh cut oranges, lemons and limes to 50:50 OJ and water. The key here is to achieving a boiling broth to impart spiciness and citrus flavor to the crawfishes. Tossing the cooked crawfishes in the butter sauce is just like buffalo wings. Use the base butter garlic sauce you see here and use your imagination to create other flavors. Another suggestion is to purging the live crawfishes with repeated changes of fresh running water. You want to do this outside with a cooler and garden hose until the water drain clear. Do not use salted water as the crawfishes will soak up the salt resulting in overly salty crawfishes.

KT, many thanks for capturing & presenting your channel (I became a subscriber last night after watching your awesome egg roll recipe). My suggestion here, is to substitute the word garlic “clove,” with the word garlic “bulb,” or, garlic “cluster.” It would convey a more proportionality accurate ratio of garlic, that you’re using in this video. Many thanks KT, I’m your newest fan!

In TX, The Boiling Crab can be found in the DFW area (really nice new restaurant in Plano) and Houston. It's owned by Vietnamese people. But there should be others around the DFW area that area really good owned by Vietnamese folks as well.

Who said if you good at cooking have to speak english perfectly or fluently? I think her english is beautiful cause i honestly understand what she's saying. Also english is a universal language, just make yourself be a better shoes instead of telling people have to do this and that just because of you. Anyway, I really like your recipe and your effort Katy. Sending love from Australia.
