How Real Tequila is ACTUALLY Made

Tequila is absolutely booming right now! New brands are popping up all the time, and some take shortcuts to save money. But there are still those doing things the right way. Recently, I went to Mexico to see how tequila's really made - from the agave fields all the way to your glass! I met agave farmers, master distillers, and even someone making incredible tequila deep in the jungle.
I love tequila, and it was amazing to learn how much work goes into it. It takes years for the agave plants to grow, the work is backbreaking, and there's a whole culture to it. My first stop was the Cazcanes Distillery - to make great tequila, you need great agave, pure water, and skilled people. Meeting their master distiller, Don Chico, with over 43 years of experience, was a real eye-opener!
Understanding how tequila's made starts with the blue agave plant - this spiky, bluish giant you see everywhere in Jalisco. It takes 6-8 years to mature! The heart of the plant is harvested, cooked to turn its starches into sugar, then shredded and mixed with water. Cazcanes trucks their water in from a special spring over an hour away! Yeast is added, fermentation happens, then it's off to the stills to become tequila. But there's more than just factory tequila - I even got to see a backyard operation in the jungle! Now that's dedication. So the next time you have a shot or a margarita, remember - there's an incredible story in every bottle!

    It was my understanding that the traditional way to cook it was the brick oven and that the autoclave was a way to cut corners a bit. Did I misunderstand this? I would not think Cazcanes is cutting corners, so it caught me off guard.

    Autoclaves are fine, not as “traditional,” but they’re basically just bigger steam ovens. Diffusers are what you should look out for. Diffuser-cooked agave is terrible.

    I was able to get the cazcanes single barrel anejo 50% ABV as well as the original joven 50% and mixed XA 50%. Amazing stuff. Still have a couple bottles thankfully.

    Ayy can you recommend a good tequila that isn’t terribly expensive? Cazcanes is great but it’s also over 100 dollars

    I'm liking Santo Fino for under half that, $39.99 for the Blanco and just under $50 for either the Reposado or "Mezquila".

    You can typically find the No.7 Blanco for about $73-75. If you prefer more reasonable price (Under $50) then try these brands: Tequila Ocho, El Tesoro, El Tequileno, G4, Terralta, Volans, Cascahuin, Siete Leguas, Suerte, Lalo, Tapatio or Insolito. All have blancos and sum repos that are either sub or right at $50 (all depends on your location), all are confirmed additive free and all are very delicious. Salud!🥃

    Lui, you didn't go to Cantaritos el Guero!!! Place looks like so much fun. I hope to someday visit the area of Jalisco and visit some distilleries. And definitely check out Cantaritos el Guero!!

    This is a REALLY good video. I cultivate agave in the Los Altos region (Atotonilco el Alto). I have almost 100k plants in the ground and I never knew about the cogollo. I would hope next time you come to Jalisco, you visit Atotonilco el Alto, Arandas and Tepatitlan but mainly the first two. Atotonilco and Arandas are the two main tequila producing cities in the Los Altos region. Arandas and Tepa are known for their stunningly beautiful women. You can come to my ranch, which is about 75 acres. There is a distillery right next to it. It's small and really no frills but there are quite a few other distilleries in the area as well, like in nearby San Francisco de Asis, affectionately known to the locals as "San Pancho." Atotonilco is where Patron, Don Julio and Siete Leguas all have their distilleries (I won't mention the 4th big brand there because it's garbage). I can give you tips and pointers on where to stay & what restaurants are good etc. We also have a few waterfalls, at least 3 I think, right there in Atotonilco. There is a really cool "restaurante campestre" called "La Violeta" I know you and your friends would REALLY enjoy. Listening to some of these guys that work at the distillery speak English made me think perhaps it's time I got my resume translated to Spanish because I really would rather live down there than in expensive-ass Colorado (cold, too). I think I'm going to do that before my next trip.

    From what I've read, quality Tequila is cooked in the brick oven, and average or cheap tequila is cooked in the autoclave. Brick oven takes days, where autoclave can be as little as 12 hours.

    In autoclave is just a cooking method. Think of it like a pressure cooker. If you're trying to you know roast a pork loin you could just throw it in the oven and do it over the course of several hours or you can put it into a pressure cooker. Now there are some brands that will just throw the Agave into the autoclave turn the pressure up as much as they possibly can to get that done as quickly as possible. But some of the brands that I've seen that have autoclaves they make incredible products but they just use low pressure. Autoclaves. And cook it for a longer period of time. The use of pressure doesn't automatically make something worse or better. But it is a tool that can be used to speed up the process significantly and in theory can be a negative impact, but there is Nuance there

    Legitimate question here. If mixtos, made with 49% sugar cane are considered inferior, does that make rum an inferior, headache-inducing spirit based on its key ingredient, sugar cane?

    Nah it being rum has nothing to do with it, but the quality of that rum matters. A great rum is a great rum, a bad rum is a bad rum.

    ​@Lui_Fern though rum DOES give me massive headaches, probably because it's distilled sugar cane. A quality bourbon or tequila doesn't hurt at all, unless I drank too much and got drunk and neglected to rehydrate or replace electrolytes before going to sleep.

    According to the CRT, who control the appellation of origin and construct the rules for tequila, brands like Cuervo Especial are real tequila. Where this product is “tequila 100% agave.” Real “tequila,” is traditionally a mixto (though the crt hates that word).

    @@o.o-vt1rc I agree. I think additive free, 100% agave tequila is the best, purest expression of the blue agave, but that’s what should be said, not “this is real tequila.” From the 1930s until the 2000s, most tequilas were mixtos.
