I think YAO live in a relatively colder climates due to being in hill when I live in heat equivalent to Texas. So I'm worried if I keep it out for two weeks it will definitely rot. Also the jars yao used are ceramic earthen ware, they don't absorb outside heats and if they are stored in hut or in mud, they tend to act as natural refrigerators. correct me if I am wrong.

Is it necessary to boil the rice water before fermentation? If you don't boil it first, will it still work as well? And how long is it absolutely necessary to let the rice water ferment for minimum & maximum days please? 🙏❤️

Hi there, according to the old technique, boiling is necessary. Fermentation takes around one to two weeks, the rice water needs to be sealed properly and store in a dark and dry place.
