Homemade marshmallows are 100% better than store bought. Sugar, water, corn syrup, and egg whites. Cook them, whip them on high speed for 15 minutes but into a lined pan and let set overnight. I love how they sing the praises of the preservatives and crap they put in to extend shelf life.

well if you're using sugar instead of corn syrup for at least part of it, of course it's going to taste better! Try removing the corn syrup completely & it will taste even better still! You can also buy sugar only marshmallows from most countries around the world, there's only one country that make super sweet yuck with corn syrup in everything! I've home made marshmallows, it's fun (although messy) but really no superiority in taste compared to most commercial brands available where I live

no details on how corn syrup is processed either, it doesn't grow like that you know, the corn has to be extensively processed to create that primary marshmallow ingredient! Gelatin is a tiny part of the final product compared to corn syrup, so if any ingredient is going to get it's own feature of making, it should be that, shouldn't it

At choir practice one evening I mentioned that I had gathered some marshmallow seeds by the Saint Johns river, and was trying to start them in the soggy ground by my airconditioner drain. I got looks as though I was insane. I said, "You do know that marshmallow is a plant, don't you? The confection was named after the plant whose roots were used for the thickener before they started using gelatin." That is how far removed we are from where and how our food is made. Other related mallows: hibiscus, hollyhock, rose of Sharon...

Most commercial gelatine is made from seaweed these days. And no the thought of gelatine made the old way before the discovery of seaweed does not make me want to throw up as you put it. Vegan’s have only been around since the early 1900’s before that meat based products was never an issue until somebody who never grew up on a farm got to see how it was all done for thousands and thousands of years. Modern living has made so many city dwellers Squamish over basic living requirements, and most if that all happened after WWII
