Yeah! I'd say a really good way to learn outside of obvious music theory studies is to listen to music of the general style u wanna write in alot. If you listen from an analytical point of view, you hear alot of intricacies and choices and learn alot about why and how things are written. Some of my favs are Takagi Masakatsu, Porter Robinson, Radwimps, and various other japanese influenced stuff. Other than that, some general midi tips are to vary your velocity and note start and end length. I may be wrong since I don't play piano, but try to make it so that all notes don't start at the same time, and typically I think the sustain pedal is released after each note in the progression, though u can experiment with holding sustain for some fun effects. You can also have a "strum" type pattern for the start of the notes on chords, which can sound very dreamy. The notes that are higher on velocity are the ones that will give the chord its character. Lastly, experiment with voicing your chords, instead of just general minor and major chords :) I hope this helps!!!
