Hajara sells very popular street food here in Ghana commonly known as Brukina, Degue or Thiakry. Brukina is made from millet, yoghurt and sugar. It's especially common among the northern communities in Ghana. Here in community 1 Tema, Hajara and her daughter make this on a daily basis for sale. In this video we learn the process of making this popular dish as well as experience a day in the life of a street food seller.

The milk process is called pasteurization. For this to take place you’ll have to heat your milk till it’s 100 degrees Celsius and if you don’t have a thermometer then the moment it starts to boil then you’ll turn your stove off. That method is to help kill all pathogens in order for the shelf life of the milk to to be long. Then you’ll wait for the milk to cool down but not completely then you’ll. This method can also be quicken by introducing it to an ice bath and when it’s about 50 to 30 degrees then you’ll stop with the cooling process then add your sugar, flavors and a yogurt starter or bacteria. If you don’t have it then you can choose to add a portion of an already made yogurt. You’ll cover it tightly then you’ll incubate it. If you don’t have a cooler then you can go with the traditional method which is slightly warming your oven then you’ll put your milk in there and not turning your oven off for about 9 hours or you can heat some hot water put it in an ice box or a cooler put your milk in there cover it with the lid then cover the cooler with a blanket to prevent your heat from escaping. Leave it overnight then you’ll have your own home made yogurt

Never had it with fanmilk. However I do like it with groundnuts.
That cooking method is called poaching and we have a lot of poaching pots in the market so instead of going through that stress you can decide to go for the pots

Great job Jasmine, keep up the goid work. 👏👍🥰 We brought some already prepared millet from Ghana and we use natural yoghurt together with cultured milk or amasi. I prepare it for my family but unfortunately I can't have any because of lactose intolerance.

HI,JAZZY,THANKS ALOTFOR THIS WONDERFUL VIDEO.IS BURKINA DIFFERENT FROM ZOM-KOUM?ZON-KOUM IS A KIND OF DRINK MADE ROM MILLET AS WELL,AND SERVED TO VISITERS AS A WELCOME DRINK IN THE NORTHERN PART OF GHANA AS WELL,MAYBE EXTENDING TO AS FAR AS BURKINA-FASO I GUESS.ZOM-KOUM LITERALLY MEANS,FLOUR WATER IN THE LOCCAL DIALECT OF ALMOST ALL THE ETHNIC GROUPS IN THE NORTH,IF AM NOT MISTAKING.ZOUM means FLOUR, AND kuom MEANS water.MILLET FLOUR ACTUALLY.THIS VIDEO REMINDS ME OF MY GRANDMA.HOPE YOUR GRANDMA IS DOING WELL,JAZZY.
