Fitting of the top and bottom head pieces didn't happen during my visit: the hoops at either end of the barrel are removed to let the barrel expand slightly. The head pieces are slid inside, slotting into a groove cut around the inner circumferance of the barre. The steel hoops are tightened again to squeeze the barrel together and grip the head pieces. This short film by wine-pages.com was made in the cooperage of Louis Latour in Burgundy.

Pity how they missed out how the ends go in and the whole thing polished up.
I've only seen barrels made in the traditional way before. That pulley system and the adjustable hoop sure make the process a heck of a lot easier.

My dad was one of only 6 people in nz years ago that could make them by hand , I doubt he had all this shit lol . Makes ya wonder how the fck did he do it , was during the late 80s early 90s

I use to supply white oak to a barrel stave company here in the USA so seeing this video was a cool memory.

Man, I worked at a cabinet shop when I was in high school and I hated getting splinters there. I can only imagine what these guys must go through.

Very cool. Well done video. I always hear that french oak staves are split, and not cut but it seems like most cooperages are cutting them.

To make one misunderstanding clear: I guess the author heard "collège" in its Burgundy context and translate it in "College" in a US context... in most cases you are in a collège (or Lycée) from 14y to 17/18 y old and then choose your track. and yes it can take 3 years to become a skilled professionnal (at 20/21) when you didn't choose to become a professionnal at 16 but even then 6 years to become a highly skilled professionnal. en.wikipedia.org/wiki/Compagnons_du_Devoir

Many people have asked about fitting the tops and bottoms into the barrel (the 'heads') which did not happen during my visit: a slot is cut inside the barrel, round its whole circumference, near the top and bottom. To fit the 'head' piece, a couple of the steel rings are removed to loosen the staves slightly, and the head is manipulated into the slot. Fermenting should not be done in wood containers. That creates headache wine. (I may be misinterpreting your remark)

I'm a cooper in scotland and it was a 4 year apprenticeship and i'm still learning shit to this day and i've been doing it nearly 10 year never did college though and do all of it by hand years ago it was like a 10 year apprenticeship

If the video do not show how the staves are cut, I do not think the video realy shows how barrels are made.

Hi Gustavo. The staves are cut by machine, but I was not able to film that part of the process unfortunately. So the video is not perfect, but I hope it is still useful :)

Agreed. As well as the selection process for the individual staves to form the perfectly-sized barrel. Lots of skill missed by relying on machines too.

That all depends on the level of 'toast' the barrel maker wants, and the winery who buys the barrels wants: heavily charred barrels impart more of a charry, toast and coffee character to the wine.

using gas flames to soften the oak staves , how does that affect the final flavour of the wine , as oppose to using oaks chips fire.

Hi Stephen, well the flame is doing the work: charring the barrels to a greater or lesser extent as required by the cooper or the customer who has placed the order: the charring can be done with any flame really, as it is the charring of the barrel itself that gives the level of "toast". Using toasted oak chips, or steel tanks lined inside with toasted oak staves, is a cheaper alternative to using barrels.
Would be good to show how long the toasting takes, at what temperature and why?

Toasting does two things. Heats up the wood to make it more flexible for bending the staves into a barrel, and starts to caramelize the wood sugars to add flavor to the wine. (Toasting and charring are two different steps)

First I want to thank you on this video, i have learn many stuff from this perfect video, but one thing I need to know before I start to make my first barrel (God help me)... how much degrees I need on board edge? It's depends on number of boards, right? For example If I use 20 boards I need to split 360 degrees on all edges i have (21), so my egde on board will be 18 degrees? Can someone tell me more about this and please corect me if I am wrong! Greetings from Serbia!

Jim Pursley the temporary bands are removed, which allows the staves to spread open, allowing the ends to be fitted into the grooves. Then the final bands are fitted, closing the staves around the ends.
I wish that one of these video's would show how they put the taper in the hoops. It is not just flat stock metal.

There is a traditional Australian cooper that does a video showing how to make a bucket. He shows how to taper the rings. Barrels are bigger but the same process. although modern they probably use cold roll rather than a hammer.
Good video, however doesn't show how the top and bottom are installed.

Does anyone know would a barrell stay strong and not fall apart if one of the bottoms is completely cut out to make a big pot for a plant for example? Thanks :)

Don't cut it out. Remove the end by taking off the end hoop and loosen the quarter hoop, then quarter hoop and end hoop just needs hammered back on tight again.
I wonder how liquor is stored in them for 15 or 30 years without any leakage?
What do they do for three years at college that prepares them to do this?

Heating softens the wood so it can be bent, but also charring the inside of the barrel contributes to the 'smoky' aroma and flavour. The barrels will last for decades, but after the first half dozen uses won't really impart any aroma or flavour.
Would love to have seen the planks being cut to produce the staves.
How do you decide where to drill the bung?

Jim, the bung is always in the centre of the barrel, so I guess you choose one of the broader and thicker staves, so the barrel structure won't be weakend too much by the hole.

Most barrels are made from oak, but sometimes other woods are used including Acacia wood and Chestnut wood.

Devrim, barrels can last many, many years, but each year give the wine less and less aroma and flavour from the oak. Barrels are expensive, somewhere around 700 - 800 euros each.

Oak is the choice 99% of the time, but there are wine barrels made from other woods like Acacia and Chestnut in some parts of the world.

question - once a barrel is used, and a hole is made in it, how can one close the hole again? or does every barrel is one use only?

The barrel has a hole drilled in the side and a 'bung' - like a big rubber stopper - is used to open and close the hole.

@@nikimilky Yes, absolutely. Barrels can be re-used many times, and a lot of winemakers prefer barrels that have been used 1 to 3 times before instead of new barrels, as they don't give such a strong 'oaky' character to the wine.

Phil, well they can be used forever more or less as they are pretty indestructable. But for the top wines the barrels tend to be used for five or six years, each year the 'oakiness' of aroma and flavour is reduced a little bit, which for some wines and winemakers is a good thing. They can also be re-conditioned, the insides being shaved down to fresh wood and re-toasted.

Someone commented about the time involved to become a cooper.....it was and still is the longest standing apprenticeship in the world....when done with hand tools only. Your working with 2 different compound curves on a curved surface and accomplishing this all with only a drawknife sitting on a coopers workhorse.....on if only the hemeroids could speak......

It's a shame I did not get to film this part of the process, but basically there is a slot or groove cut inside the barrel, round its whole circumference, near the top and bottom. To fit the top 'head' piece, a couple of the steel rings are removed near the top to loosen the staves slightly, and the barrel head is then manipulated into the slot - it's circumference is very slightly bigger than the barrel's inner circumference, so it sits inside the groove all the way round. When the rings are put back on and hammered down it tightens the barrel staves again, and so the head piece is firmly squeezed into the groove. Then the same is done for the bottom.

Capacity varies as all different sizes are used around the world. The most common is around 225-litres (so around 300 standard bottles of wine). Cost varies too but new barrels are expensive: around £800/Euro900/US$1000

Michael, I explain in the intro text that this bit wasn't happening when I filmed: "One important stage that is missing is the fitting of the head and bottom pieces. Once the barrel is assembled, a slot is cut all the way round the inside of the barrel top and bottom. Steel rings at the top are removed to loosen the barrel, and the head piece - whose circumference is slightly bigger than the inner circumference of the barrel, is slid down and slotted into place, before the rings are hammered down again to squeeze the barrel together and securely grip the head piece. Then the same is done for the bottom.
