We are sad to report that chef and restaurateur Jamal James Kent passed away on June 15, 2024. Owner of Saga, Crown Shy, and Overstory, Kent was beloved in the New York culinary community and beyond. Watching this after hearing the unfortunate news of the chef’s passing!😢 He was such an inspiration! May he rest in peace.
This dude has understood what it means to be a true leader and he's even passing this skill on. The moment Calvin tells the guy it's too salty says so much about the working attitude and atmosphere.

@@Gunsforbuns it’s not what he said only. It’s what came after and how he said it. In some professional kitchens, if you made anything out of what’s expected, you get berated and screamed at with little to no actual feedback. In a kitchen like this, you’d expect everyone to be perfect at what they’re doing but people make mistakes. Calvin knows if he did what I said earlier, it doesn’t help anyone, especially team morale.

I heard this chef passed away. So heartbreaking. Loved him in this vid and would loved to have worked for him. Condolences to his family and colleagues

I love the way the team interacts with eachother :) not only is the food playful but also the team
I love it when he says “beat it, nerd”. The love they show to the ingredients is awesome.
This entire series is an AMZING insight into the mind of a chef!!

Seeing this man on chefs night out was so lovely and seeing the way he is with his staff just shows anything he puts out will no doubt be amazing with the passion and love for what he does is true
I'm really happy for James. Considering he had to hide behind his background for so long and now look at him runs what looks like a fun, interesting and delicious place to dine at. Eater found a great place to tour!
This guy was just on Munchies Chef's Night Out, it was wholesome because of just getting wasted like everybody else he went out with his kids and wife. He seems like a good guy who's not a pretentious chef that I see in these videos about these kinds of restaurants.

SAGA is incredible. There's also a dry aged duck version of the last savory course and its the best duck I've ever eaten. You need to go there to understand.

Jamal (as a person and as an owner/chef) is incredible! I was impressed not only by his personal story (he says "I don't need to hide behind my first name - I have my own personal stories to tell") but also by his genuine interaction with his staff (the guy saying "my life is perfect since I started working here" with his boss right next to him is hilarious!). And it does not hurt that he grew up listening to Wu Tang Clan 😉
Went to college with Nick, super dedicated and overall one of the nicest guys to work with
It's KZread channels like this which not only get us through the pandemic but allow us to transform our very thoughts about different dining experiences.
Its possible it could have be well hidden while the cameras where there but I feel like this is one of the healthiest kitchen atmospheres I’ve ever seen. I think that another change in our generations dining experience.

Chef Jamal, you are a truly master chef of fine dining. I am not easily impressed, but you truly have created and mastered what fine dining is all about. Your unique cuisine creation and presentation are unsurpassed. The passion, time, and skill that you dedicated to each master piece of art/cuisine is unmatched by any other. Many fine dining restaurants are very expensive, but the food is average, placing a high $$$$ amount on a cuisine does not make fine dining. One day if I happen to be in NY and my wallet allows me to experience your master creations, I will be the first person in line to reserve a table. Applauds and a standing ovation to you CHEF JAMAL! Thank you to all of your TALENTED team of CHEFS!!

There's virtually nothing on that (top floor) menu that I would want to eat, but watching these videos is amazing to see such brilliant professionals at the top of their game.

I loved this!!! Food looked amazing!!! When the did the cucumber I was thinking one scoop out, then they made the scoop the vessel!!!! Also loved how everyone is meticulous in their craft and yet sarcastically funny af!!!!
Finally a leader who understands that just because they work for a high standard, doesn't mean the workplace needs to be frustrating and exhausting for the workers.
This is probably the coolest chef ive seen in all of the mise en place videos ive watched so far.

I remember the time when I was still working in Tetsuya in Sydney Australia. Service is similar to this which is extremely beautiful & constant pressure at the same time.

This is now $345 - $395 gratuity not included lol. Ridiculous that gratuity isnt included - especially when you can get food of the same quality in dozens of other places just in NYC for less money. Now I can understand why La Bernadin monthly reservations are booked within the first day of the month and SAGA has a reservation open an hour from now
The work and technique that goes into the dishes are amazing and time consuming. If this place does not have a Michelin star, I hope it can get one in the future.
