How a commercial dishwasher works

An expert from the Cleanline team explains how a commercial dishwasher works. Normally larger and more powerful than the domestic dishwasher; during the wash cycle jets in a commercial dishwasher spray very hot water and detergent onto crockery and cutlery with the help of electronic dosing equipment (sometimes called a sprite). A rotary jet rinses with fresh hot water and rinse aid during the rinse cycle leaving crockery and cutlery dry and sanitised.

    I'm guessing you can only place stainless steel and stoneware in there. Thermoplastics would probably melt and thermoset plastics would probably crack.

    In America we have plastic cutting boards that we put in these commercial dishwashers. They don't melt but if it's a really high temp dishwasher they will Warp I usually try to bend them back the way they were before they cool off.

    Surfactants. It decreases the surface tension of the water so it slides off surfaces easier.

    Yeah, and he calls that pathetic thing a man's dishwasher? Well, if you've worked for a giant restaurant like Cheesecake, our dishwasher is 3-4 times longer and the dishwashers run 4 of those carts through at a time!

    What an embarrassing set up to do a Global Video demonstration on! The door arms are not attached to open as one like they should, the clean table is poorly fitted and not attached so the racks don't slide out properly and the chemical containers appear to be empty. Hopefully this is a shop test kitchen and not an actual food service facility. Also, a divided cup rack would do wonders to reduce breakage during washing and handling.

    This gentle man does not know exact function of Dishwashing machine chemical. each chemical has its own function and responsibility. he said Rinse aid helps to dry the dishes, but how it works, he could not explain.... During washing what happens ? at what temperature dishes gets wash ? why we need to set temp at 55 or 62 degc ?and how detergent supports Hot water ? what temperature we set for final rinsing ? and why we set specific temperature ? There are so many factors to know why this industrial dishwasher considered for commercial purpose use. he made video with empty brain
