If you're just getting into lacto fermentation and love hot sauces, this video is going to help you out. I go over the basic way to ferment peppers that will give them a great flavor that you can't replicate anyway else. Lacot fermentation is popular amongst many big brands of hot sauce. Typically when they say the peppers are "aged" they are fermented.

1 green apple
3 garlic cloves
1 tsp cumin seeds
Fine Sea Salt
Filtered Water
2.5 % brine
There are a few ways to remove chlorine/chloramine in tap water, which I didn't go over in the video.

    Ha! I'm ahead of the curve this week. I spent my Fourth bottling 3 different ferments; Habanero-Mango, Serrano Taco Sauce (w/fermented tomatoes), and ... SERRANO APPLE Hot Sauce. So, we were on the same basic wavelength. Even went with the Granny Smith apples. I added a cinnamon stick (discarded at blend). Not really sure if that even came through in a 1-month ferment.

    @@RavinDave-theOriginal Those sauces sound great. I've done a 2 week habanero fermentation with a cinnamon stick that came out nicely and the cinnamon was subtle and gave the sauce a nice profile. Maybe 1 month the flavor got lost like you said.

    I'm starting my first jalapeno ferment and I'm glad I found this recipe, as well as all the steps you took to ensure a safe and clean hot sauce! I'm a bit skeptical about the initial pasteurization as I've heard it might take away the heat and flavor of the hot sauce. I think I might sit out the blended ingredients in the fridge and pasteurize it a week later so the ingredients have time to come together.

    @@DahooksBae Glad I can help. I've never heard of the flavor/spice level being different between the way I pasteurized the sauce and they way you described. The only way to prove it to do 2 different batches each using one method. I'd be curious of the results. For the amount of time I let it ferment (1 month) the flavor was awesome and has a great amount of heat for using jalapeños. Thank you for watching and hope you like it. Cheers
