    Great video! I have a question, will the peppers disperse throughout the jar as they cool and set? It looks like they all were floating at the top when they were done in the water bath. Thx!

    I have the same question, I see this on most pepper jelly videos, but nobody has ever mentioned; however, I will make this and see for myself.

    So here's what I discovered after making this recipe; I think three cups of sugar is not enough to thicken enough to keep the jelly mixed, so the heavier peppers float to the top; I slow-boiled the jelly a bit longer to steam off some of the water, just enough to coat the back of my spoon (it will further thicken as it cools); my jelly stayed mixed after I did this. I don't know if it will work for everyone, but it worked for me.
