Homemade wine carbonation system - higher pressure than Sodastream

Having seen videos of people trying to make 'Champagne' by carbonating white wine with a Sodastream, I decided to try it and found results to be pretty poor and actually broke the Sodastream I had.
Instead, I put together a more robust piece of kit that works very well. The results are excellent and my home brew wine which costs me about £1.50 a bottle tastes as good as any Prosecco I've had. You could also fizz up any cheap store bought wine with similar results.
You will need:
CO2 bottle (Beverage Grade CO2) - I got mine from BOC (£28, then £3.60 a month)
CO2 Regulator (in psi and/or bar)
Male 1/4" BSP to 6mm ID Hose Adaptor
Length of 6mm ID reinforced hose
Two jubilee clips for the hose
Gas ball lock disconnect (thats the grey quick release fitting on the end of the hose)
Carbonator cap (the metal cap on the bottle)
1 litre plastic bottle
This is a 3 part series of videos explaining how to make wine from a kit. Hopefully you will see how easy it is to make wine using this sort of kit and give it a go yourself. It just takes a little time spread out over a month or so and you will have approximately 28 bottles of good, but inexpensive wine.
I've added a fourth video on carbonating wine if you like your wine sparkling. This is not the technique used to make Champagne or Prosecco with yeast, but how to easily carbonate any still wine effectively; so even if you buy a still wine from the store, you can fizz it up.

    this is a brilliant video thanks - just carbonated my first rose, and the soda stream bottle is just for dispensing my beers now.... little tip i found useful - I have a tube on my pressure cap to the bottom of the bottle so the gas travels through the liquid. then shake as you have described. its useful as you can see that the liquid has absorbed all the gas when the big bubbles stop coming up from the bottom when the bottle is stood upright. My co2 reg doesnt make the noise yours does to tell me its done. thanks for the video

    How would you create a keg of sparkling wine and tap it? Can you run it through a cold block or would the entire keg need to be chilled when tapping it?

    Same way Paul. You'd need to ensure your keg could withstand the pressure though. I'd take the shelves out of the fridge and CO2 the wine when cold. Don't try and shake the keg, just pressurise it and leave it for a while. The CO2 will slowly be absorbed into the wine. You may need to repeat the process a few times until the pressure is static and stops being absorbed into the wine.

    Soda stream pressurizes to the same psi - 15 psi is surface pressure. It's just a lot cheaper to use this because they charge like $30 per 60L refill.

    The soda steam is loses pressure easily via the neck. Complete waste of time. The alternative offered here is far superior. I’ve stopped drinking it to be honest, drinking too much!

    Hi, yeah you can carbonate what you want. The colder the liquid the better it will absorb the CO2.

    Hi, great video. I have a mobile van where i have 7 taps and 2 gas bottles, 1for beer the co2 and the other is argon for other drinks. I wanted to ask if i put white wine in a 9l keg and connect on the co2 will i be able to pour it on a tap and do i need to shake it time to time or only at the start? Thanks

    If you add CO2 to the keg, it will gradually be absorbed into the wine without the need for shaking. Shaking just speeds up the process. You will need to keep the pressure stopped up though cause it will drop as the CO2 absorbs into the wine.

    @@lukadjuraskovic16 I'm not sure what your keg is rated at pressure-wise. You could always start with a low pressure and if it's not sparkling enough add a bit more until you are happy. (Leaving it a while to gas up.) Try not to blow up your keg. :)

    Thanks. I rented that from BOC Gases. I’m not sure if you’re in the UK but they’re pretty decent to deal with. I don’t make wine anymore…. I was drinking too much. 😊

    Is it possible to remove the stainless steel nipple off the pet bottle and quickly replace it with a regular pet bottle cap so i can move one and bottle multiple bottles? thank you in advance...

    No I wouldn't recommend that. When you take the cap off after pressurising, the CO2 in the ullage will leave the bottle and be replaced with air. Thats going to make your wine go off unless you drink it straight away and it'll lose a lot of its carbonation. What I did is to buy about 3 of those stainless carbonation caps, then I always have a few pressurised. Just leave the cap on and leave it in the fridge until you are ready to drink it then swap to a standard cap once opened. When my wine has finished, I bottle it flat into 2 litre plastic bottles with no air in, brim it. Then when you want to pressurise it, you can either pour into another bottle or pour some out of your 2 litre bottle and pressurise that if you're feeling especially thirsty :) You need to have somewhere for the CO2 to go when you pressurise it, and squeeze the air out as shown in the video. In summary, I would pressurise only what you plan to drink and then remove the stainless cap only when you are ready to drink it. If you want to pressurise a few bottles, buy some more carbonation caps.

    @@GeeWhizRS CO2 is heavier than air, so once you've pressurised the bottle if you remove the Carbonation Cap and replace it with a regular pet cap you should be ok. Air will only enter the bottle once you start to drink/pour from the bottle. Even then, the CO2 escaping from the wine in the form of bubbles will, because it's heavier, stay at the bottom of your ullage space creating a barrier between the wine and the air in the ullage space. Well that's the theory anyway. I just got a couple of carb caps so will try and practice what I preach. Cheers EDIT: Obviously, just like in regular carbonated drinks, as you drink more from the bottle, CO2 escapes from the liquid and it slowly becomes flat. Wine will be no different... Just an excuse to drink it all in one sitting. But further to what I said above... If you do the carbonation process and immediately swap out the carbonation cap for a pet one, as long as the bottle remains unused/unopen it should stay fine and carbonated until ready to drink.

I would suggest though that if you remove the carbonation cap to swap for a regular cap you will definitely introduce air to the wine; so you will want to drink it within a day or so before it oxidises; and it will. You can hear how much CO2 you lose from the bottle at 6:30 in the video. You will lose a lot of pressure swapping the caps and the carbonation will reduce as the CO2 in the liquid is liberated to repressurise the ullage. Have a think about what happens when you open a pop/soda bottle the first time.... lots of pressure escapes and you have a nice fizzy drink. The day after when you come back to the bottle, you will never get the same level of fizz as when you first opened the bottle.

    That was 750ml in a litre bottle… aka a bottle. 😄 I also did 2 litre bottles, but you can fill into whatever size you want. I stopped making it because I was drinking too much 🙄

    @@Grandpa_RLP Go for it. If you (or your friends) like fizzy wine, gassing up even a cheap wine gets you a great result. It’s easy to do and you get more bang for your buck as it seems to wake up the taste. 👌
