Here in germany we actually don´t eat a lot of woodruff. It´s mostly in sirup form, as jello or as a effervescent powder like ,, Ahoi Brause´´. It´s like coolaid. One of those things that some like and others really dislike. Like licorice in scandinavia i guess but really not that common. I think it´s nice. It´s one of those old flavors that have lost their popularity in modern times. In german it is called ,,Waldmeister´´. That means literally ,,Master of the Woods´´. I think that´s pretty cool.

I remember that about 10-15 years ago it regot it's popularity and each ice cream vendor in Germany sold Waldmeister icecream. I was so hyped about it, but I can't actually remember the taste xD

I am german and you just blew my mind. I feel supid now. I honestly didn't know Waldmeister is an actual plant, I thought it is something like blue curacao, something that just made its way via sirup and now is used everywhere for its green color and strong taste. The whole time I was like 'no that's not a thing in germany, I never heard of that, what are you talking about' -.-

I have been watching these videos for such a long time and heard Silvan talk about sweet woodruff and using it as vanilla, and I always thought, i don't know that plant, sad we don't have that here in Germany. DAS IST WALDMEISTER?? 😱😂

It's so interesting to me as a German to see woodruff being compared to vanilla in flavour because for me it's a very distinct and more fruity aroma than vanilla :) to me it kinda smells like if bright green was a flavour and I personally associate it with very strongly/ artificially flavoured foods like jello, ice cream, gummy bears etc (but I still like it, it's kind of nostalgic)

How lovely to use a backyard herb as a flavoring. You have me curious to try it . Your ice cream looked wonderful. I have used lavender in ice cream with success but only used a few sprigs. Your videos are a welcome treat any day of the week. Happiness to you.

I never would have thought to use herbs in ice cream thanks for the idea! I just made batch #2 of mint chocolate chip ice cream by steeping a few handfuls of the abundant mint in my garden in the milk/cream/sugar instead of an extract. So yummy!

When I make extract from vanilla beans using everclear, I've been taught to dilute the everclear 1:1 with distilled water 30 minutes ahead of pouring it over the beans for a better extract. Not sure is this would be true for herbal extracts too but it's something to look into!
