Homemade Rochester NY Garbage Plate with Zweigles White Hots!

If you have ever visited Rochester, NY you may have heard of this culinary creation that is found in many different diners and restaurants around the area. Originally created decades ago as a way to offer a big plate of food cheaply for the working folks, the founder of Nick Tahos Hots started selling a big plate of home fries with 2 Zweigle's "Hots" at a super low price. Over the years and three generations, the menu item took on a life of its own and now has many options and has been copied by many other places in the area. I grew up in Upstate New York and this was a staple!
Here is my homemade version which is pretty close to the original "Garbage Plate"! It brings back childhood memories for sure!

    Nick called it "hots and patots", add your own enhancements, i.e. macaroni salad, beans, etc. Always came w/ a slice of white bread and butter.

    Hi Darren. I have an off-topic question for you. The question is about the best way you are aware of to reheat leftovers. For instance, this evening, I have left over Kamado Slo Roller chicken and left over Blackstone stir fry vegetables with noodles. It is about time for me to choose how to reheat it all. I have a microwave, air fryer, toaster oven, steamer, sous vide, and a few other less convenient options. I was thinking that the APO might be the best way to reheat left overs. I do not own one so I cannot test my idea. The question: you have so much equipment at your disposal, how do you reheat leftovers?

    it really depends on what it is and who I am cooking for. but I can tell you that at least 50% of mine if it is just for me are re-heated in the microwave... if I am re-heating a batch of pulled pork or other bulk meat the sous vide and APO are my choice.. you cant beat the speed and convenience of a microwave sometimes.
