Homemade Mint Chocolate Chip Ice Cream

Homemade Mint Chocolate Chip Ice Cream
6 eggs
2 cups sugar
1 Tablespoon all-purpose flour
pinch of salt
14 oz. can Eagle Brand Sweetened Condensed Milk
5 oz. can evaporated milk
1 quart heavy whipping cream
2 teaspoons Pure Mint Extract
7 drops green food coloring
whole milk
2 - 4.4 oz. chocolate bars, chopped or shaved
Beat eggs until light and fluffy. Stir together sugar, flour, and salt. Add to eggs and beat again just until smooth. Whisk in sweetened condensed milk, evaporated milk, heavy whipping cream, pure mint extract, and food coloring. Pour into a 4 quart ice cream canister and fill with whole milk to within 2 inches of the top.  Assemble ice cream maker and freeze according to manufacturers directions.
Once ice cream has been churned, remove the lid and stir in the chopped/shaved chocolate bars. Transferred to a freezer safe container, cover with a lid, and freeze until firm.

    I too grew up on ice cream made with raw eggs ! Never hurt me and I am in my 70's ! Chocolate / Mint Chocolate Chip is my favorite flavor of ice cream so thank you for sharing your recipe with me ! ! ! ! Now I have no excuse not to have great ice cream in my freezer....a son and grandson also love Mint Chocolate Chip ! Winner winner winner all around ! Blessings to you both !

    I am 84 and have made ice cream with raw eggs and never had a problem. My grandmother and aunts made it also that way. No problems.

    I grew up making ice cream also and it was one twice the size of yours…..hand crank and rock salt and ice…any ice hanging from the roof and when it was done we put the canister in a snow bank…..those were the days….wouldn’t trade a day of my childhood

    We sometimes called the paddle a dasher. We always made it outside in a hand crank ice cream freezer. My dad was in charge of the freezing and the kids always got to lick the paddle. We did this every memorial day, forth of July and labor day. Labor day was always filled with mixed emotions. Not only was it considered the end of summer. We always started back to school the day after labor day.

    As long as the outer shells of the raw eggs are cleaned before cracking them open, salmonella is not a problem. My mom was a home-economics teacher. Even just running the tap over the eggs is enough if the shells are relatively clean. Thank you so much Tom and Melissa!

    I also could eat sweetened condensed milk with a spoon. I love the old appliances. Things were made to last back then. I like to put a little bit of xanthan gum in the custard mixture, it helps make the ice cream less icy & more creamy. But I think this recipe with the sweetened condensed milk & heavy cream makes it less icy & more creamy. I'm sure someone said, but the paddle is called a dasher. It's been a long time since I've made ice cream, & it was in a machine similar to yours, it liked like the wooden bucket. I must admit that I do want one of the machines that freezes & churns without using the ice & salt. Just can't afford one right now. We all love ice cream.

    If you want a substitute for the eggs you can use two boxes of instant vanilla pudding and put half the amount of milk that the box calls for.

    My mother always said thevsugar "cooked" the raw eggs. I taught high school chemistry for 36 years and don't believe that! Her mother always made a cooked custard. At Grandma's house they made a 3 gallon hand crank freezer full. They had a heavily padded quilt they put on top that one of us kids sat on when the ice cream got a bit difficult to turn. Boy! Did we all love that ice cream. Papa always went to the ice house and bought at least a 50 pound block of ice. The ice not used in freezing the ice cream we used in our iced tea glasses. Great tasting and really cold iced tea!!! Good memories! This video makes me crave vanilla ice cream made at home. Lots of effort put into the making made it taste even better!!!😮😘

    I have that same hand mixer from 1972. Still works well. I recognized those beaters. I have a one quart ice cream freezer that I freeze the outside container. No need for ice and salt. My mom always had a White Mountain ice cream freezer. First one was a crank . She eventually got an electric one. They were pricey but they made best ice cream. There were always frozen milk jugs of ice in the freezer so she was ready to make ice cream at any time. She used a hammer to break it up. Yes, she always had to “pack” the ice cream for awhile after making it. And, the paddle was called the dasher for some reason.

    Nana always made a custard before we could churn the ice cream; never knew it was because there were raw eggs in there. And, of course, we had to hand crank that old thing, and it would get so hard to turn! Great memories ❣️ Thanks for this easy recipe!

    Nothing wrong with raw eggs. Bodybuilders have used them in their protein drinks for as long as I can remember. People eat raw cookie dough with raw eggs. Alot of people eat their fried eggs barely cooked. Nothing better than a runny yolk! I've made it 65 years and still kickin! That ice cream is next on my list to make!!!!

    I used to make ice cream with my middle school science tudents by using small and large zip loc baggies. We filled all the ingredients in the small bag, put it in the large bag, and put in ice and rock salt. The they shook their bags and massaged the bags too. They were learning about solutions,, mixtures, etc...

One thing I would mention, in the printed recipe it reads two Tablespoons of mint extract. I visibly watched you use two teaspoons of the extract. More might be way over powering.     I've never found an incident of someone getting salmonella from raw eggs. Search the internet. There are processed chickens that have carried it, but usually from people's hands. I think it's just people being overly cautious because someone scared them, and salmonella could hurt someone with a severely weakened immune system.

    I would be just as concerned about eating raw flour. That's why commercial places cannot serve raw cookie dough that uses raw flour. Otherwise, I love your videos.

    OKAY, which is correct? The written recipe calls for 2 pints or 1 quart of heavy whipping cream but you say in the Video, 1 pint or 2 cups of heavy whipping cream? Also, the written says 2 tbsp of pure mint extract, but you say 2 tsp of pure mint extract, which is correct?

    The raw eggs didn't bother me at all. But green food coloring in mint chocolate chip ice cream (which is naturally white) wass my concern. But the recipe is going in my box of recipe cards for sure!!!!
