Homemade Halloumi Cheese - Deep South Texas

Today I am making homemade Halloumi cheese at Deep South Texas. This cheese is popular in Cyprus, where it is made with sheep or goat milk. I am making it with cows milk. It also has dried mint added at the end of the process. This cheese is unique because it dose not melt, and can be grilled or fried. Oddly enough, it also goes well with watermelon. Recipe ingredients below.
2 gal whole milk, low temperature pasteurized, and non-homogenized
1/2 tsp calcium chloride diluted in 1/4 cup water
1/2 tsp rennet diluted in 1/4 cup water
2 oz cheese salt
1 tablespoon dried crushed mint leaves

    Thank you for sharing the recipe for Halloumi cheese, it's one of my most favorite cheeses! At one of our local Mediterranean restaurants they bring it to your table flambe with pears. I love your videos, thank you 😊

    Some I vacuum packed, it should last a couple months. 🤠

    You didnt collect the bi product the "anari". Its similar to ricota cheese. Before puttimg the Halloumi cheese in to heat it you add 1 cup of milk and heat it up. The anari will magically form ot top and you collect it, strain it for 20 minutes, put some salt and its ready for cosumption😉.

    Yes, your pan is too hot. When the oil smokes it's become rancid. Try lowering the heat and using a sturdier oil; ie., coconut oil. Olive oil is too delicate for frying.

    I didn't look too close to one of them hurricanes that came in Larry I know we had a disturbance from the first tell her that hurricane that hit Louisiana and then it seemed to quiet down after that but the static noises really a little Texas tornado in that kitchen I don't know if I'd like mint with cheese either I seen remember hating something like that back when I was a little kid in Wichita Falls or my grandma then I haven't lived in Fort Worth but she was always making homemade everything she seemed to have a lot better health once the kids grow up moved off and I don't have much just cooking times for everybody because my one of my mom's sister is married to a Catholic gentleman Uncle Frank so every time we were up there and it was the weekend and they got to where they couldn't you know eat me then as I got older that kind of cheated they just ran around and hit it they crawled up under Grandma's house just eat that piece of me anyhow telling secrets that looked all right I just wonder what it would have tasted like look like a lot of salt I don't know it I think you said cheese salt I don't know never heard of it

    Eminem's kid I want to put sugar on my watermelon my daddy gets so mad it's a no it's the salt that brings the sweetness out in the watermelon I don't know my grandma was a watermelon farmer Farmer she was always telling her watermelons to Piggly Wiggly and she was a chicken farmer in Piggly Wiggly would all come and pick up their eggs and then pick up their dead chickens it wouldn't want to lay anymore and I know it was sometimes those Saturdays to be at Grandma's I didn't like harvesting day it was quite horrendous that's the last two cows on the Back Forty that they loaded up when it was time to go I broke my heart spent hours out there talking in them cows I didn't have no friends and I weren't violent cows at all there is a bowl at lived on the other side of the Farm and Home ad about every third word out of me was shut up
