Enjoying homemade bread doesn't mean slaving away in the kitchen for hours. With my tried and true SIMPLE dough recipe, you'll have two delicious loaves of crusty and chewy artisan bread on your table with just 5 minutes of work.
What's even better, this dough will store perfectly in the refrigerator for up to 14 days, so make this dough up ahead of time and have a hot fresh loaf of bread on the table in about an hour!
No dutch oven? No problem! Though I tend to use my dutch oven for this recipe, I have a special trick that will still yield a nice crust with that perfectly crunchy chew.

    I'm originally from Redding CA. I've heard you say that y'all are, "in the Pacific Northwest," but do you mind sharing what state/area? I'm now in Henderson, Nevada (limited for scorching summers) & really daydreaming about homesteading a lot in the past six months. My grandparents had a farm & a nice garden, but I was a kid & wasn't there full time to properly learn everything to use in my later years. So, I'm grateful for your videos. You have a very peaceful & joyful demeanor. Thank you.

    I just recently discovered your channel. Completely love it! I am a professional chef who chose to quit career for kids. But I wanted to give a tip. To keep Yeast alive/fresh longer, put it in a glass mason jar in the fridge. The glass will keep it better than the packaging it comes in.

    I made this and baked a loaf today. WOW it is so soft and good. I didn't flour my hands, I just dipped my fingers in a bowl of water, I learned this tip on another bread making site. This is now a favorite bread recipe, thank you

    All these comments, people really don't realize how big a deal bread was throughout history. 90% of human food requires prep of some kind. This really is the microwave generation. I love the idea of making without kneading and then pull a chunk and make what u need good video

    Keep that bulk yeast in the freezer. The other day I realized I was out of yeast packets. Somewhere in my memory, I recalled putting a jar of Redstar in the back of the freezer. Checked the date, it was use by 2006! Gave it a try out of desperation, and it worked great. Stayed active in the freezer, 16 years past the date. Yeah, I know, I need to clean out my freezer more often. That's the problem with frost-free.😂😂

    This was without a doubt one of the easiest and very tasty recipes. I doctored mine a little by adding 1 Tblspn of sugar and backed off to 2 Tspn of salt. I use pink Himalayan sea salt so it’s very powerful and my first batch with 1.5 Tblspn was inedible. I had to throw it away. I also placed a circular wire rack in the bottom of my cast iron Dutch oven to keep the bread from resting on the 450 degree bottom. The first batch I made was tough to saw through the bottom. The wire rack fixed that problem.

    Hey love your how to’s. If I could offer a little pastry chef tip, do a dry wash to get the sticky dough off your hands first using a bit of flour you scrap up from dusting your work surface. Rub your hands together vigorously over the trash/compost/bowl. when most is off your hands then wash as usual in the sink. Prevents gunk building up in the drains. 😋🥖🧈

    thank you so much for suggesting a cookie or baking sheet with a roasting pan on top to seal in the steam for people who don't have a dutch oven or cast iron with lid! Such an important detail and no one ever says so. NOW, I will try this! YAY! Oh my goodness, I can't wait now! Thanks again!

    You may not see this but I made two loaves of bread last week and brought them to work with a stick of butter. Both were gone before lunch...I got two slices....it was awesome!

    This bread has been a game changer for me. I keep a batch always going in my fridge so I can always whip up a loaf for dinner. I no longer buy French bread at the grocery store and it makes amazing French toast when starting to go stale. Also... Best cinnamon rolls

    This is interesting. I've used a no knead recipe for a few years now and it's the best bread with the greatest texture yet it doesn't require refrigerating it at all. Nearly the same ingredients and measurements, let it rise in bowl until it doubles, use forks to scrape it down the sides which deflates it, use forks to split the dough down the middle and again using the forks, lift each half out and plop into buttered bread loaf pans (or buttered small Pyrex bowls as the original recipe calls for but I like my cast iron loaf pans), let rise again for about 25 min while preheating oven, then bake. Awesome crumb and texture and tastes like my grandmothers bread recipe that has way more steps to make. I can start the bread in the morning and be eating it just a few hours later.

    The fact you use loaf pans may be part of the reason you don’t need to refrigerate, if your dough is as wet as this recipe’s. This recipe won’t keep its shape as a free-form loaf unless it firms up a little in the fridge. I’m pretty sure it would fare just fine in a loaf pan, though the longer fermentation does improve flavor as well.

    This bread turns out perfect every time and I only refrigerate for one hour. In fact I recently went on vacation and took a loaf. It was so popular I had to make two more loafs in an unfamiliar kitchen while there to appease the group lol. Still turned out absolutely perfect and they dipped it in everything from olive oil to marinara to chicken dip. Also used it to make open face toasted cheese with fresh garden tomatoes and back on. TOTAL HIT!!!!!!

    I've been a home cook/baker for many , many years. Several years ago I tweaked an over night bread recipe, from a you tuber's pizza dough. It quickly became a real favorite. A little different than your recipe, but basically the same idea. I gave my Mom the recipe and she didn't want to make it because it took hours to ferment. I made her promise to make it one time. Well, she made it and loved it ! And made it once or twice a week from then on. Because she was elderly, making bread the traditional way had become too difficult for her (she was a very accomplished cook/baker) This kind of recipe made having fresh bread possible for her all the time until she passed away.     OMG, I've been making bread for 40 years now, I thought my great grandma's recipe was the best..... Boy was I mistaken! Started it yesterday and baked my first loaf today.     I made bagels with this recipe this weekend! just added a little extra flour to make a slightly stiffer dough, boiled them for a few minutes on each side and baked them for 25 mins. They were delicious!! So grateful for this dough recipe! Thank you for sharing with us

    I made this recipe to accompany a beef stew for our Christmas evening meal, and it was the easiest and most delicious bread. It turned out to be a favorite. The idea of using apple cider vinegar to enhance the flavor in lieu of kneading was interesting and certainly worked. Love trying something new, and making this bread will become a regular occurrence.

    I made your bread 🍞 yesterday and I made a total 🐷🐖out of myself 🤣. I haven't made bread in years! No I take that back, moons🤔🤫😜. I got to tell you, I don't think I'll be buying bread at the store anymore, not unless I can't help it. This recipe is so easy and absolutely yummy!     I've been making bread at home for many years. I tried Melissa's method yesterday and baked a loaf today. I could smell the apple cider vinegar when I took the loaf out of the cast iron dutch oven. There was no vinegar taste however. The bread is as good as any I've ever made and a lot easier to make. A keeper recipe!

    I came for the recipe and left when she said to put it in the refrigerator for 8 hours ("since we're not kneading it"). I'd rather use my standard recipe and knead it for 10 minutes.

    Oh WOW!! I took the time to make this bread today (and i had a VERY busy day) and it turned out AMAZING! The only change i made to it, was brush it with olive oil and sprinkle kosher salt on the top before baking. It turned out FREAKING AMAZING!!

All we are really lacking now is a constant source of power (solar panals sonn!) And doing a better job on preserving our veggies.     Wonderful recipe I’m 71 raised nine kids ,Miss cooking for them. Whenever I visit any of them I get so much joy baking and cooking making rolls etc. had major surgery lately had to go stay with my son daughter-in-law and grandkids had a ball making rolls and cakes and stuff for them came upon sourdough and making sourdough bread and also rolls from the discard my bread a couple times didn’t get the rise I should but it wasn’t too too bad. Your bread looks amazing sourdough bread takes a lot of time and a lot of work your bread looks very close to sourdough bread. So I’m definitely going to try it much less work.

    I know that this is a old video, but you can use the top of your kitchen aid mixing bowl. Also, add a pan of water when you preheat your oven, steam is what is used in commercial bakeries, and it helps so much. This is my opinion only.🍞🍞🍞🍞🍞🍞🍞

    I hadn't thought to use vinegar, I just leave my dough to slowly ferment in my fridge at least 72 hrs before I even start the 2nd rise. And I only use 1/4 tsp of yeast. As for the twisting motion, it helps it not stick if you use some oil, either some light olive oil or canola on your palms, and a touch on the surface you're kneading.

    OK, I made this bread earlier this week and wow, was it great. We had company and sandwiches that were amazing. It toasted really well also. It is so worth it. I weighed my flour at 120 grams per cup and it was perfect. With weighing the flour felt the added 1/2 cup was needed. Thank you for the recipe.

    Oh, boy! I can’t wait to bake this tomorrow! It’s been in the fridge for a few hours, so there will be fresh bread at our place in the morning. Thanks for this easy to do recipe. ❤️. ETA: Baked a third of this into a round loaf on Thursday, 10-28, and, holy moly! This was the best bread! Half the loaf was gone that day. I’m going to bake another loaf as a housewarming gift for family moving back to our area this week. ❤️

    Being new at breadmaking, I found this video to be one of the most helpful I've seen. Simple to follow recipe & instructions & all the little helpful hints are just that--helpful!

    Omg I made this but added 1 Tbsp of sugar and it’s almost gone. Soooooooooo good. Crispy outside soft inside and airy

    Delicious! Made broccoli cheddar potato soup and this bread recipe tonight! The boys and hubby loved it! I wanted to eat supper before 7pm so the first rise was only 11/2 hours and the second rise bout 20 mins. Still had a nice rise and beautifully soft and chewy inside, crust was so good! xx

    I just had to tell you that I made your bread and it turned out PERFECT!! I am so excited!!! Before this all my homemade breads were epic fails! I've been trying since COVID began last year. Now I'm trying your sourdough starter method. Absolutely love your channel!

    Melissa I made your Artisian Homemade bread! It turned out beautiful! I have to get a bread blade and some of those other cool kitchen gadgets to make bread baking easier! Thank you for using your skills in the kitchen to help others get creative with food! I love to cook and bake!

    For my breakfast two slices of Sourdough Bread , on one slice I spread homemade pesto and the other slice I melt English Coastal Cheddar Cheese (from TJs) in the oven then I pair them up and toast it in the Panini Press and the smell of the cheese and pesto is to die for. Scrambled eggs on the side and some tomatoes yum yum yum with Coffee. Bon Appétit!!!

    That bread looks so good! I make homemade organic bread when I have time, I bake mine on a baking stone, made a huge difference in my bread.

    I tried this recipe the other night and oh my gosh, my kids went crazy over it. I ground a combo of hard red and hard white and it really came out nice. Can't wait to make another couple loaves.

    I LOVED this recipe. It’s so easy and tasty. I’m not able to believe that I can make my own delicious bread AND have dough at hand in my fridge. I also loved some of the tips that made it relatable and simple to gain confidence in baking bread. My fave was the tip for knowing if the water temp is good for adding to your yeast. Thanks for sharing!

    I have made this same recipe for a few years now. We call it Quen's Nest Bread. Since that is where the recipe was found by a friend of ours. It makes delicious pizza crust as well. I often shape mine into baguettes for gatherings with family & friends. Wheat flour can be substituted as well... Taste just as delicious. I prefer letting it sit in my fridge for at least a 3 day minimum. We like the sour yeast flavor it adds.

    Out of all the videos I watched, you've given me tips I've never heard. 1 way to check water temp for yeast. That's where I believe I've messed up in the past. I don't think mine was warm enough. I'd always just heard "not to hot or it'll kill it" #2 Dutch oven tricks. I don't have one and love these tips.

    I'm in a wheelchair now with very poorly functioning hands. I have given up a lot of what I used to do from scratch. I am able to still can thanks to the presto 12 quart electric canner which happens to stay in the kill zone for botulism 20 times longer than any other form of canning. Makes it easy on me and my PA.

    I didn’t want to comment until I made this loaf and wow.. it almost taste like sourdough!! I am not the best cook and this is a fool proof epic recipe that I will make forever!! I think on on loaf 10 now and it feels like it gets better every time! Thank you for helping me and my family eat from scratch!!

    I have just started learning to make bread. I started with unleavened bread and It’s very tasty! Had a few disasters to start with but it just takes practice. I haven’t got around to making bread with yeast yet. Your bread looks amazing! A bit of work but worth it. I must try this recipe. Even though I am only making unleavened bread I get a lot of satisfaction kneading the dough it’s so much fun and relaxing and the end result. There’s nothing like freshly baked bread. I love mine fresh made and slightly warm out the oven. Tempted to make some today 😊

    Thank you for the video. It has been great comparing approaches and recipes and then working out the best for me and my kitchen. One thought.... if you use the combo cooker upside down (flat part on the bottom), you don't have to use the parchment paper to lower it in. (I have tossed some corn meal or flour on the flat part to keep it from sticking). cheers!

    I just made it tonight and it is the best recipe I have tried so far. Soft but easy to slice and great taste and consistency. Wow! Jackpot! Thank you for sharing it. I am glad I doubled the recipe because my family of 4 eat more than half of a loaf in one sitting.

    This is fantastic thank you! I have a recipe from my great great grandmother for a rustic parmesan bread that follows the same no kneed and bake in a dutch oven but I haven't been able to get the good rise on it like I would expect from a bread. I'm going to try the same recipe but in the method you demonstrated and hopefully it comes out just as wonderful.

    New to breadmaking and have followed other recipes on KZread with no luck...lol... This morning made dough using your recipe. Came home to find it had risen and so far looks great :) Now in the fridge overnight and baking bread tomorrow. Fingers crossed :) Thankyou as you are a great teacher, precise and not confusing in your directions. Hopefully this will be my go to recipe for baking bread from now on. Will get back to you tomorrow with an update :) Thanks again

    I’ve made this bread a couple times now. I didn’t have a Dutch oven when I made the first batch but it still came out great using a roasting pan covered with cookie sheet. But the second batch in the Dutch oven came out even better. So easy and simple with little ingredients. I don’t think I’ll buy bread again.

    Tip, heat the pan in the oven so it is hot before putting the dough in to bake. Put the skillet portion on the rack and put your dough on it, then use the Dutch oven portion on top. Be careful with the hot pan . It will give you more oven spring and a darker crust. Bread temp should be around 205 - 208 when it’s done. Let it rest 1-2 hours before cutting. If you can hold out that long!
