Here in Scotland we never home killed any cattle but we did our pig can’t anymore as it’s illegal now, I used to enjoy helping to make sausages and we cured our own bacon every bit of the animal was used it saw us through winter, it makes you appreciate what that animal did for us. These guys are awesome to watch

Right, those 2 didn't monkey around...got right to it and had a pretty handy little set up with that truck. I'm in the states and you can still home kill but you must consume, you cannot sell it. That stated, beef is not economical to do on your own as who is going to build a cooler to hang it in for 10 days before cutting it up, and you cannot transport it as far as I know.

We also cannot sell it as it need to be inspected by a certified meat inspector to be sold.

@@kiwifarmernz Sounds like it's pretty similar to the US. Here we have 3 types of processors. 1st is the big guys like Tyson where they kill and process thousands per day for probably all or most markets, then there is the USDA inspected (US division of agriculture) where they can sell to retail or or you can have your animals processed by them and sell retail and lastly there are the custom slaughter where you can take your animal in and they can process for you and it's for your own consumption. I don't really want to get into the politics of it, but basically that's about it. A farmer can slaughter and process on sight for own consumption, but the economy of that just doesn't work out unless you have all the stuff and it was free...IE cooler to age, saws and all the rest of the stuff needed.

was glad to see the beef specialty parts cheeks,tongue, tail harvested. Some folks dont use them they are very tasty. Sad that there isn't a market for hides now adays

Do you know the type of rail and trolly combo they are working with?

Tongue is great.
Far out fast. We did one for ourselves last year. Was our first time doing it completely ourselves. Didn’t go to well, should go a bit better next time.
They were pretty good at their job. This is a good visual of where all meat that is consumed comes from. Wonder how many a day they do?

A friend of mine does this and he can do 8 in a day. Depends on how far he has to travel between jobs as well.

I think they said they had 4 or 5 cattle, some sheep and a few pigs to do that day.

Im curious why they separated all the gut on the ground? When we do a beef here in Victoria we take the kidneys, heart and sometimes the liver out for dog food but we drop the gut straight into the loader bucket to dispose of.

They take it all with them, all part of the service. Its probably because there are a lot of 4ha lifestyle blocks around which wouldn't have a dead hole.

We keep the liver, it is the easiest to cook and I cut it into small pieces for dog treats. The heart and kidneys are a bit tougher to cut. The missus wnats to get tripe from the next one. Apparently the dogs love that too.

It's a slide with hooks that allow the carcass to slide into the chiller. Same as what is used at the meat works.
Hi Alister, Im based in South Canterbury and looking for 35 beef Warner or yearling claves to raise till prime. What would you recommend as a good source to get some healthy animals for a good rate.

Best bet is to call your local PGGWrightsons , Hazlets or Rural Livestock rep and ask them. They may have some on their books for sale.

Cows are quick learners. They certainly put 1 and 1 together and you can't get near the rest of them after that if they see one getting done.
I didn't see it in the vid'. did they take the skin away?

Most of the time while on farm I think they use one of those wire things to take the bur off.
Thanks Kiwi farmer, We prefer our meat home killed as the animal falls over in the paddock without knowing whats happened. Much nicer meat and a lot of it!

The yield is around 52% with that condition. Then of that 300 kg carcass about 70% is usable meat, so we should get about 200kg of meat back.
21 days in the chiller before cutting up, 2% weight loss per day is actually a massive bonus on taste, these rushed modern ways are dreadful, and I know it’s hard to find honest butchers too

These guys are licensed to do this these days,if they weren't up to stretch the Ministry would remove said license. As they aren't selling retail it doesn't have to be perfect.
